    Being known for creating a stunning wedding cake is one thing, but being able to decorate it with fresh flowers wired to perfection, will make you a sought after wedding professional. Fresh flowers are always in style, and with the current trend in receptions being gorgeous flowers overflowing on every table, finishing off the cake with them will really pull the entire room together.
    Fresh flowers are extremely delicate, and if not wired together correctly, they can lose their petals, fall apart, and even wilt. Watch as Darlene uses a variety of flowers and techniques to create these stunning posies using her 2 decades of experience to create the perfect arrangement.
    Also learn exactly how to create the perfect "messy" buttercream finish. It may look rustic and homestyle, but it does require a number of techniques to get it looking right.

    6” x 2 Cakes, baked and cooled
    • 8” x 2 Cakes, baked and cooled

    • 5kg (11lb) Sweet buttercream( • Sweet Buttercream Reci... )
    • Large spatula
    • Small spatula
    • Turntable (optional)
    • 6” and 8” Cake boards/ cardboard
    • 10” MDF board
    • Large Bread Knife
    • Parchment/ Baking paper
    • Metal/ Plastic scraper
    • Ruler (optional)
    • Piping bag
    • Coupler (optional)
    • No. 7 Piping tip
    • Wooden dowels
    • Conduit cutters
    • Pencil
    • Dowel template
    • Paper towel
    • Flower vile
    • Fresh flowers:
    One head of hydrangea
    5 David Austen roses
    3 antique roses
    • 24 gauge floral wire
    • Green parafilm
    • Sharp flower cutters (scissors)
    FLOWER Tips
    * Buy the highest quality of flowers, from a reputable florist. For a better quality finished
    topper, purchase flowers that are in season. They will fair much better
    * Purchase your flowers 2-3 days prior to the wedding, unless it is extremely hot. This
    will allow them time to open
    * Once you have the flowers, cut about 2cm off the bottom of your flowers, and place
    them directly in water
    * When cutting the flowers, ready to wire, cut the stems to 1-2cm in order to use the
    flower vile
    * When creating a flower spray, wire a few extras in case of damage
    * Once wired, do not place your flowers in a household fridge, or they will blacken when
    you remove to use on your cake. You can however use the crisper/ fruit section for
    your ready-made topper
    *Ideally flowers like a temperature of 5-7C degrees. Tropical style flowers and orchids
    can not be refrigerated at all

    I have made a smaller version of this for a wedding cake and found by putting the flowers in an air tight container after misting with water kept them fresh for a good 8 hours. It's colder in the UK in summer too. Love the site. I have learnt so much.

    So funny!!! First of all congratulations on a fabulous tutorial. BUT all that trouble and care to use a flower pick so the wires/ flowers dont touch the cake and then, wouldnt you know it...the florist just pokes the last ones directly into the cake!!! hahahaha the face of bewilderment from the cake decorator is priceless!

    Hi Vanessa, just a quick question, I was just reading about how you should never put parafilm and the wires inside the cake, or even the stems of the flowers, and yet the last two roses were put directly straight into the cake. Just wondering if that is food safe?

    hello I will be making a 2 tier red velvet and cream cheese frosting wedding cake. I know that cream cheese frosting is softer than buttercream. should I just have cream cheese frosting inside and coat the whole cake with buttercream instead? may I know the pros and cons of it? thanks xx

    This is such a fantastic and infromative video. Thank you so much. I have recently started using fresh flowers on my cakes and they look stunning. I have just a few questions. How do you transport a 3 tier cake like this to a venue? Where did you purchase your cake stand from? and can you tell me of some other flowers safe to use on cakes please? So many questions, sorry =)

      Christina Fam I stack a three tier, and place it on a yoga mat to transport, flowers not attached. I got the stand from Global Sugar Art in the US. Most flowers are safe to use, but if you are worried, just look them up online. We love to use roses, peonies, orchids, and hydrangeas.

    Love, love all your tutorials!! You are very talented. I just have a question about the crusting icing, I understand is rock hard on the outside, but is it moist and soft in the inside? Or when they cut the cake will it crumble?

      Erika Gutierrez No it won't crumble, as it's not that hard. You can still dent it with your fingers, but it's just not going to smear all over your hands when it's straight out of the fridge. xo

    Can you tell me how many recipes of your Orange Peach cake did you use for each tier to get the height? Also, if you want it to be Vanilla you say just omit the peach schnapps and orange rind. In each recipe how much vanilla would you use to substitute? Your videos are lovely and I have learned so much from watching them. Thank you.

      Leslie Loughnane We have a recipe for the vanilla on our website, and a video on RUclips. For the 3 cakes, I used one batch for the top tier, not quite two batches for the second tier, and 3 batches I think for the third?

      Natalie Armstrong Transporting it completely done to the reception. I only dowel on site for cakes 4 or 5 tiers, and it's always only the top tier on site, the rest is stacked beforehand. Love to see a pic when you make it #cakestyle :)

      Yes, even though it is going in a flower vile, you should always go for safe flowers.

    Hi, thank you so much for this tutorial, i was wondering if your vanilla cake recipe from your website or the Orange Peach Cake, is good for fondant cakes, with several tiers, and also for this buttercream cake for 120 people.     First thank you for this very detailed tutorial. Im gonna use yours for my friend's wedding next week. But I am worrying about the temperature over my place. I am in Vietnam which is high humidity. It's around 30C (86F) degree. I wonder if I let the cake outside during the ceremony for 2 hours (from 4pm to 6pm), is the icing melted? If it is, do you have any suggests of solutions. (I really love Swiss Meringue Buttercream and dont want chocolate ganache) thank you again :)

      Quynh Nguyen Thank you, and really, all you can do is not get the cake out until reception starts, and then make sure it's eaten within 1.5 hours or so. We have the same problem here in summer. You just have to tell the bride, the cake will melt in the sun and make people sick, so it must shay in the fridge for some of the wedding. All the best x

    Hi guys.. thank you for your step by step info.. wonderful! Please could you tell me is the dowel in the middle a cake dowel or did you get it elsewhere? I am having trouble finding dowels this long. PS.. I am in England so we won't have the same shops! :)

      Deborah Stewart We get the thicker dowels from a hardware store. We tend to use 10mm-14mm thickness. You can usually have them cut them up into smaller 1m lengths, if you ask them. xo

    Thank you, loved the way you did the cake and flowers however did not think it was a good idea putting the two individual flowers that had wires straight into the cake, they could also have been put into the very small flower vial.

      There's a note at around 21 minutes in, just saying, if you are going to use a flower vile, place the dowel just off centre. It's hard to see in the video, but we placed ours just back from centre. In general though, place dowels in the very centre of most cake designs. xo

    Hi cake style! I see each cake tier here is pretty tall, did you guys have to support the layers with boards for them to be this tall so they don't cave or break?also when you transport a cake like this.. do u cover it with anything while u drive? I'm nervous to transport a cake this big 1 hr and half drive! Would this feed 75 people for a wedding or what size pans would u recommend for 75 servings this tall. Thank you so so much! I have 3 months until the wedding I'm just trying my best to stay calm.

      alicia landis You can see more of the details that go into a wedding cake in our wedding cake foundation. Nothing over the cake to transport, but the vehicle must have air con on the entire time, and as dark as possible. This cake feeds 130 people, you can do a 7" and 9" to feed 80 people.

    Can you offer any advice on buying fresh flowers for cakes? I mean do you just buy them from a florist? Or do you have to buy them from a specialist florist so there's no pollen?

      Louise Booth Just a regular florist, but make sure the flowers are safe to put on flowers. Things like roses are perfect.

    If im only doing a smaller 2 tiered cake should i still add the large dowel for transport or is it not necessary

    Sorry, I meant to say before you do the crumb coat do u let the cake chill in the refrigerator just like that without anything covering it.

      Mercedes Alvarado Yes, without covering, so the crumbs harden. It's only for about 10-30 minutes.

      +Kristina Mauro For small coffee servings, you would need 6" 8" 10". For largers slices 6" 9" 12" does about 100 dessert slices.

    Is that a circus cake that I see behind you, can you show us how to do that too pleaseeeeeeeeeee... I tried out your Ombre cake for my final project for wilton Course 1 & it was a hit, mine was orange though!!

    Hi, so i followed your recipe for the 8inch white mud cake with SUCCESS and im just wondering how you workout how many batches if i was to make a cake of this size..
    im doing the 6, 8 & 10inch tins. (2 cakes for each)
    also approx how many would this feed?

      +Jasailor33 it depends on the overall height of the cakes. For 5" high layers when decorated, I use 1 batch for 6" 2 batches for 8" and 3 batches for 10". I tend to make 3 batches and do one of each, and then repeat.

    Can we use fondant in place of the fresh flowers on the buttercream frosting? Must cakes frosted with buttercream be left overnight in the fridge the day before the event or is it ok to leave it in room temp?

      +Claire Davis Fondant and this recipe of buttercream cake both be left at room temp, as long as it's in air conditioning or a cool day. I ice the morning of for buttercream, but the night before for fondant, so I can stack it in the morning when the cakes are firm.

      Tracy Sheridan Gumpaste ones will, but I put them on last. And make sure they are really set, like a week old.

      SCM Sure. We would charge $500. The tiers are high, so it feeds 130 dessert (large) servings. I guess it depends on the area you are in, and the quality of the ingredients, but I hope this helps a little. :)

      Venus Medler I bake in two pans, and use for layers of cake overall. Each tier works out to be 5" high in the end.

      +Josephine Ebuenga Our sweet buttercream recipe, but in Summer you have to use half butter, and half shortening to stand a chance.
