Being known for creating a stunning wedding cake is one thing, but being able to decorate it with fresh flowers wired to perfection, will make you a sought after wedding professional. Fresh flowers are always in style, and with the current trend in receptions being gorgeous flowers overflowing on every table, finishing off the cake with them will really pull the entire room together.

Also learn exactly how to create the perfect "messy" buttercream finish. It may look rustic and homestyle, but it does require a number of techniques to get it looking right.

FLOWER Tips
* Buy the highest quality of flowers, from a reputable florist. For a better quality finished
topper, purchase flowers that are in season. They will fair much better
* Purchase your flowers 2-3 days prior to the wedding, unless it is extremely hot. This
will allow them time to open
* Once you have the flowers, cut about 2cm off the bottom of your flowers, and place
them directly in water
* When cutting the flowers, ready to wire, cut the stems to 1-2cm in order to use the
flower vile
* When creating a flower spray, wire a few extras in case of damage
* Once wired, do not place your flowers in a household fridge, or they will blacken when
you remove to use on your cake. You can however use the crisper/ fruit section for
your ready-made topper
*Ideally flowers like a temperature of 5-7C degrees. Tropical style flowers and orchids
can not be refrigerated at all - Хобби

I have made a smaller version of this for a wedding cake and found by putting the flowers in an air tight container after misting with water kept them fresh for a good 8 hours. It's colder in the UK in summer too. Love the site. I have learnt so much.

rosyjaybird So glad you like it.
Cake Style nnnn.
So funny!!! First of all congratulations on a fabulous tutorial. BUT all that trouble and care to use a flower pick so the wires/ flowers dont touch the cake and then, wouldnt you know it...the florist just pokes the last ones directly into the cake!!! hahahaha the face of bewilderment from the cake decorator is priceless!
So clearly that the last flower didnt have the wire.. It was just the flower with it's stem..
Fanuela Eifeline Correct
Preciosa!
Ficou lindo dais

Thank you for an amazing and informative video especially the fresh flowers and the buttercream texture.
Do you do any tutorials on macaroons?
Marie-Anne Duarte Not so far, but Jon makes incredible macs. Just have to get him in the kitchen!!
+Cake Style. Gorgeous cake! I am going to make it this weekend. I want to try you Italian Meringue Buttercream Recipe. Would you recommend it for this cake?
Cheers!
You are best
How many servings does this 3-tier cake yield? How do you pack it for delivery? Thank you for the help. I might volunteer to make my daughter's wedding cake.
omggg can i buy one for my wedding from yousssss??????? beautiful
Thank you for sharing your techniques and tips with all of us. Your work is perfect! I have been making cakes for family gatherings for quite a while.. It's really fun and satisfying! I recently agreed to do my sister's sweet sixteen cake for 150 people.. Can you tell me what pan sizes to use and how many layers. Thank you
Thanks ladies ,it’s an amazing cake ...
I would like to know more information about the buttercream
how long can the cake be out of the fridge for at the wedding reception ?.
How do I avoid the cake becoming dry ?
🤗👨🍳🤷♀️🤔🙂
Love your channel. Really. You are amazing at explaining. How many pounds of butter did you use to make enough sweet buttercream frosting for this cake to cover the filling, crumb coat and the out icing?
Thank you , great tutorial. Can I ask how much buttercream was required for the 3 tier cake?
♥♥♥
Hi Vanessa, just a quick question, I was just reading about how you should never put parafilm and the wires inside the cake, or even the stems of the flowers, and yet the last two roses were put directly straight into the cake. Just wondering if that is food safe?
Thank you for the video, the cake is beautiful! What type of greens can safely be used on a cake?
hello I will be making a 2 tier red velvet and cream cheese frosting wedding cake. I know that cream cheese frosting is softer than buttercream. should I just have cream cheese frosting inside and coat the whole cake with buttercream instead? may I know the pros and cons of it? thanks xx
+Crystal Keng hi ! Did you manage to bake that wedding cake? Cause I'm planning to make it do. What were the outcome and what do you suggest? :)
I absolutely love this cake! I'm doing a wedding cake for a friend's daughter this coming weekend and am using this one as inspiration (she wants hers a bit more "naked".....with a bit less icing). With 4 cake layers in each of your tiers, how many people would you expect this cake to serve?
Lavender Lady That cake feeds 60.
Thanks much for the information, and also for the wonderful video! It's a beautiful cake, simple and lovely.
Lavender Lady Thank you
This is such a fantastic and infromative video. Thank you so much. I have recently started using fresh flowers on my cakes and they look stunning. I have just a few questions. How do you transport a 3 tier cake like this to a venue? Where did you purchase your cake stand from? and can you tell me of some other flowers safe to use on cakes please? So many questions, sorry =)
Christina Fam I stack a three tier, and place it on a yoga mat to transport, flowers not attached. I got the stand from Global Sugar Art in the US. Most flowers are safe to use, but if you are worried, just look them up online. We love to use roses, peonies, orchids, and hydrangeas.
Lovely technique! What recipe did you use for the cake and buttercream?
Wonderful video! Quick question, about how much buttercream did you use for this 3 tiered cake?
Lori Loya There's a pdf link in the description to the material to give you a hand. xo
Love, love all your tutorials!! You are very talented. I just have a question about the crusting icing, I understand is rock hard on the outside, but is it moist and soft in the inside? Or when they cut the cake will it crumble?
Erika Gutierrez No it won't crumble, as it's not that hard. You can still dent it with your fingers, but it's just not going to smear all over your hands when it's straight out of the fridge. xo
When u chill the cake in the refrigerator do u put it in just like that or do u put something like foil to cover it
Can you tell me how many recipes of your Orange Peach cake did you use for each tier to get the height? Also, if you want it to be Vanilla you say just omit the peach schnapps and orange rind. In each recipe how much vanilla would you use to substitute? Your videos are lovely and I have learned so much from watching them. Thank you.
Leslie Loughnane We have a recipe for the vanilla on our website, and a video on RUclips. For the 3 cakes, I used one batch for the top tier, not quite two batches for the second tier, and 3 batches I think for the third?
Hi! This is perfect and all the details I need in preparing a friends Wedding cake. I need to deliver the cake. Would you suggest doing the final large dowl at the reception or transporting the cake as a whole?
Natalie Armstrong Transporting it completely done to the reception. I only dowel on site for cakes 4 or 5 tiers, and it's always only the top tier on site, the rest is stacked beforehand. Love to see a pic when you make it #cakestyle :)
Thanks heaps cake style!! Your tips helped me heaps :) It was only a 3 tiered cake so I did what you suggested. You can find the cake (its the 3 tiered with native Australian flowers on top at www.cinderellacakesbynatalie.com) I need to do another textured buttercream cake at the end of this month and this tutorial was the most helpful thank you so so much!
Beautiful! How many buttercream recipes did you use for this cake?
There's a link to a PDF that has all the materials you'll need in the description. xo
Beautiful cake !! But how do you such such rise from the cakes?
+Bianka Martinez I bake two cakes for each tier, and you can see how we get our cakes so even in our lining cake pans tutorial.
Thanks guys, please can you tell me, did you use a madeira sponge for this wedding cake? x
Beautiful technique! Do you need to be concerned about whether the flowers are poisonous?
Yes, even though it is going in a flower vile, you should always go for safe flowers.
Can I ask with the last dowl you are putting through all 3 tiers in the centre have you pre made a hole through the cake boards with the other tiers for this last dowl to go through? Oops just saw the last bit of your tutorial you have answered my question. Yes thats a bit frightening to do.
Hi, thank you so much for this tutorial, i was wondering if your vanilla cake recipe from your website or the Orange Peach Cake, is good for fondant cakes, with several tiers, and also for this buttercream cake for 120 people. Excuse me if my english is not that good, :) and also I was trying to register in your website so i can make questions there, but it always says that the id ( and i tried a few) already existed. Thanks for sharing your recipies and your techniques, they are very very very helpful, especially for those of us who are self-taught :) . Greetings from Colombia .
First thank you for this very detailed tutorial. Im gonna use yours for my friend's wedding next week. But I am worrying about the temperature over my place. I am in Vietnam which is high humidity. It's around 30C (86F) degree. I wonder if I let the cake outside during the ceremony for 2 hours (from 4pm to 6pm), is the icing melted? If it is, do you have any suggests of solutions. (I really love Swiss Meringue Buttercream and dont want chocolate ganache) thank you again :)
Quynh Nguyen Thank you, and really, all you can do is not get the cake out until reception starts, and then make sure it's eaten within 1.5 hours or so. We have the same problem here in summer. You just have to tell the bride, the cake will melt in the sun and make people sick, so it must shay in the fridge for some of the wedding. All the best x
Hi guys.. thank you for your step by step info.. wonderful! Please could you tell me is the dowel in the middle a cake dowel or did you get it elsewhere? I am having trouble finding dowels this long. PS.. I am in England so we won't have the same shops! :)
Deborah Stewart We get the thicker dowels from a hardware store. We tend to use 10mm-14mm thickness. You can usually have them cut them up into smaller 1m lengths, if you ask them. xo
Cake Style thank you :)
beautiful work.
couple questions, how long does roses stay pretty on a cake? and what kind of butter cream did u use?
also, is it bad if u stick the roses directly to the cake without the wire?
+Liliana Mendoza yes it is bad, and they last a few hours out of water, different for every type of flower
Thank you, loved the way you did the cake and flowers however did not think it was a good idea putting the two individual flowers that had wires straight into the cake, they could also have been put into the very small flower vial.
hi.. it looks gorgeus...
how come u put the big dowel going through the cake stand ? is that possible ?
Ricco Agustandra It's through the cake board, because it's just cardboard, so with force, it will go through.
HI its beautiful wedding cake but i have question what kind butter cream did u use? or usually which one is better for good result italian or sweet butter cream thank u
+samira motaghed I used the sweet buttercream for this. It's better for sitting out at room temp.
Hi guys! I love your videos, one question though, how do you get the flower pick in with the big dowel rod going through the middle? x
There's a note at around 21 minutes in, just saying, if you are going to use a flower vile, place the dowel just off centre. It's hard to see in the video, but we placed ours just back from centre. In general though, place dowels in the very centre of most cake designs. xo
Cake Style Aaah I missed that sorry! Thank you very much, your videos have helped me so much! x
Cake Style I've just rewatched 21 minutes in.... I'm not sure how I missed that! Thank you :) x
carole brown no problem hun. Better to ask and check. xo
Cake Style
Can you please explain the height size of cake pans you use and also do you make two cakes so they can be cut into two each?
Hi cake style! I see each cake tier here is pretty tall, did you guys have to support the layers with boards for them to be this tall so they don't cave or break?also when you transport a cake like this.. do u cover it with anything while u drive? I'm nervous to transport a cake this big 1 hr and half drive! Would this feed 75 people for a wedding or what size pans would u recommend for 75 servings this tall. Thank you so so much! I have 3 months until the wedding I'm just trying my best to stay calm.
alicia landis You can see more of the details that go into a wedding cake in our wedding cake foundation. Nothing over the cake to transport, but the vehicle must have air con on the entire time, and as dark as possible. This cake feeds 130 people, you can do a 7" and 9" to feed 80 people.
Beautiful cake...what type of icing (buttercream ) did you use on this one?
Edna Esquivel Our sweet buttercream recipe. There's a video tutorial on our channel. :)
Can you offer any advice on buying fresh flowers for cakes? I mean do you just buy them from a florist? Or do you have to buy them from a specialist florist so there's no pollen?
Louise Booth Just a regular florist, but make sure the flowers are safe to put on flowers. Things like roses are perfect.
hi thank you so much
but I have question where can I find stek for the middle of cake
If im only doing a smaller 2 tiered cake should i still add the large dowel for transport or is it not necessary
Jasailor33 Not unless it's travelling a long way or steep/ rough roads.
Sorry, I meant to say before you do the crumb coat do u let the cake chill in the refrigerator just like that without anything covering it.
Mercedes Alvarado Yes, without covering, so the crumbs harden. It's only for about 10-30 minutes.
Hello. I was wondering what size pans i would need if i wanted a cake like this to feed about 120 people? Thank you.
+Kristina Mauro For small coffee servings, you would need 6" 8" 10". For largers slices 6" 9" 12" does about 100 dessert slices.
Is that a circus cake that I see behind you, can you show us how to do that too pleaseeeeeeeeeee... I tried out your Ombre cake for my final project for wilton Course 1 & it was a hit, mine was orange though!!
Great to hear, and you're the second person to mention that cake. Yes, we will make a circus one for the channel, hopefully next month. xo
Hi, so i followed your recipe for the 8inch white mud cake with SUCCESS and im just wondering how you workout how many batches if i was to make a cake of this size..
im doing the 6, 8 & 10inch tins. (2 cakes for each)
also approx how many would this feed?
Much love from Melbourne xx
+Jasailor33 it depends on the overall height of the cakes. For 5" high layers when decorated, I use 1 batch for 6" 2 batches for 8" and 3 batches for 10". I tend to make 3 batches and do one of each, and then repeat.
Cake Style..... what sizes were your cakes when baked? What size pans did you use?
What size were each of the cake tiers on this tutorial? I'm going to give it a test run & want to compare what mine looks like next to yours. Also may I have your cake recipe and frosting recipe used for this tutorial? Thank you
What kind of cover cream do you use? a simple buttercream?
How were you able to get the wooden dowel in the center of the cake with the card board under each tier?
+Nikita MacRall Hammering it cuts through.
Can we use fondant in place of the fresh flowers on the buttercream frosting? Must cakes frosted with buttercream be left overnight in the fridge the day before the event or is it ok to leave it in room temp?
+Claire Davis Fondant and this recipe of buttercream cake both be left at room temp, as long as it's in air conditioning or a cool day. I ice the morning of for buttercream, but the night before for fondant, so I can stack it in the morning when the cakes are firm.
Thank you. Will fondant flowers be ok on top of the buttercream?
Tracy Sheridan Gumpaste ones will, but I put them on last. And make sure they are really set, like a week old.
Do we still need the main big dowel? If we are dong 2 tier?
yes u do
i m wordering the bigger size of cakes have 4edges that need to put the dowels in what about the 2nd and the 3d one??
Could I please ask how much a cake like this would roughly cost? Thank you. PS: Love your channel.
SCM Sure. We would charge $500. The tiers are high, so it feeds 130 dessert (large) servings. I guess it depends on the area you are in, and the quality of the ingredients, but I hope this helps a little. :)
How tall is the completed cake? What size box would I need?
Hello, how tall are each tier? What pans do you bake in? Kind of buttercream? Thanks
Venus Medler I bake in two pans, and use for layers of cake overall. Each tier works out to be 5" high in the end.
Thank you**!
What buttercream recipe do you use for this, and also the pleated wedding cake?
poetryrose1 Our sweet buttercream recipe. There's a video tutorial on our channel, and recipe attached. xo
what kind of buttercream did you use? its humid in our country what can you recommend
+Josephine Ebuenga Our sweet buttercream recipe, but in Summer you have to use half butter, and half shortening to stand a chance.
Hi here! Could you tell me what sizes are those cakes? Thanks!
+Monica Cannings 6" and 8" both 5" high
Thanks so much!
