  • Hello everybody, in this video I am making some fresh Herb Infused Olive Oil that is perfect for cooking and for salads, the herbs I used for the olive oil are Thyme, Rosemary, Basil, Garlic and Chili.
    I highly encourage you to try this at home because you'll like it 100%.
    The shelf life of this oils is around one week, if you keep them in the fridge you can extend the shelf life to round 3-4 months, use dry herbs if you want a longer shelf life.

    Great oil recipes but using the fresh ingredients in the bottles will introduce a source for botulism to grow, even in oil. Shelf life is generally 5-7 days unless you store in the fridge which extends the shelf life to 3-4 months. Completely dried herbs are much safer.

      You are absolutely right Michelle and thank you for the comment, these oils were good for 3 months, and I stored them in the fridge. I'll pin your comment, so that everybody can see it and there is no misunderstanding around the shelf life of these oils.

      Please acidify fresh herbs and garlic first for 24 hours in dissolved citric acid to avoid botulism. The university of idaho has very good tutorials.

      University of Idaho did a food safety paper on this. They say 2-4 days refrigerated max. Unless you acidify the herbs first to kill the botulism pathogens. Then it will last in the refrigerator for several months. Google University of Idaho infused oil safety PNW 664, and the study should show up.

    I use dry herbs. the wait is worth it as the oil will last much longer. Your little bottles are perfect,

    You should put some acid in there like citric or lemon juice when do my lemon basil oil i heat up the lemon rind and fresh basil let it sit for about a hour and strain i vacuum seal my mason jars too...i put my garlic in a bath of citric acid over night...but they look good!

      Thank you for your comment :) I don't really know from where you can purchase these bottles, the bottles are actually small Granini Orange juice bottles that I kept for this purpose , I immediately fell in love with the bottles when I saw them on the shelf :)

    What is the capacity of those very useful little bottles? About 50 mls? I am definitely going to try this and those small bottles are a very convenient size.

      I'm not sure I have to try that, it will definitely last longer than with the fresh herbs

      Yes, but the aroma will get lost very quickly at high temperatures
