    It had been a while since I saw Stewart pulling a couple shots, I still remember a few years back when he made coffee for you two and you sat out under your trellised patio sipping and having a nice conversation about your plans for the future. It's great to see those plans coming to fruition.

    I enjoyed the stroll through your garden while waiting for the oils to infuse...I would stuff a chicken with the rosemary and the garlic after it has infused in the oil.....or stuff them under the skin...Yum!!

    All summer I have loads of Rosemary growing because we love to go pick it chop it up, add it to a really good Greek Kalamata olive oil, big twist of sea salt and dip bread in it. Everyone loves it we look so forward to it. So wow, I will definitely do this infused oil and have some for a bit of the winter from the sounds of it if stored in the fridge. I do dry it as well to enjoy in the oil as well over the winter, but this oil sounds delicious. I have garlic too....And I have loads of basil always to deter bad bugs and call good bugs. So that might be a wonderful oil to try as well. Enjoyed this as always :)

    I use the solar infusion method to make herbal infused oils. I find that when I try to heat them over the stove, even in a double boiler, they go rancid much faster than if I solar infuse them on a sunny windowsill for two to six weeks. You can even double infuse them, by straining out the herbs from the oil and adding new herbs to that oil, and letting it infuse for another two to six weeks on the windowsill. This works for all herbs, but I especially like it for oils that I use for topical applications, like lavender for bug bites and headaches, cannabis (best pain killer for sore muscles), calendula and yarrow for rashes and bruises, etc. Makes an amazing salve. I will try rosemary next for cooking. Thank you!

    I always thought that infusing olive oil with garlic could be very very very dangerous as it can create some toxic substance or something. Please educate me on this matter, it's been in the back of my head and stopped me from infusing oils.

    • @annebiedenstein395
      @annebiedenstein395 3 года назад +2

      Infusing oils in this manner can create the perfect germination environment for botulism spores which can lead to botulism poisoning which can be fatal. Heating the oil DOES NOT kill botulism endospores. When the endospores are submerged in oil, it cuts out oxygen which is allows the spores to germinate, grow and produce toxin. The only way this method would be safe is if it is stored in the fridge where it's too cold for the spores to germinate.

    • @RhaynePrincess
      @RhaynePrincess 3 года назад +2

      Garlic in oil can lead to botulism. If I want garlic oil, I make it fresh only. None for storing. Other herbs are generally not a concern.

    Loved the video as always. Would love to know what variety of Rosemary that you grow. I’m in zone 4b. I did the same thing with a bunch of jam last year; forgot to label almost all of them and the only one I could tell by sight was the apple pie jam everything else was figure out when opened. My 10 yr old got kick out of it. He called my jams the mystery pick jams.

      Me too! I need to know the Rosemary! It was amazing. I’m a 4b and mine is so wimpy and sad. But it’s my current favorite herb.

      Same! I’m in zone 4 and expect I’d have to really protect whatever Rosemary I plant, or bring it inside for the winter
