1 tbsp. Olive Oil
2 tbsp. Butter
1 large Onion, finely chopped
2 large Carrots, finely chopped
2 Celery Stalks, finely chopped
3 cloves Garlic, chopped
4 oz. Bacon, chopped
1 lb. ground Beef
1 lb. ground Pork
Salt and freshly Ground Pepper, to taste
1 cup dry White Wine
1 (28 oz.) can peeled San Marzano tomatoes, hand crushed
1 cup Whole Milk
½ tsp. freshly grated Nutmeg
1 cup Heavy Cream
1 cup grated Parmesan Cheese
½ cup chopped Parsley

If y'all are wondering what that veggie mix is called. The onion, celery, carrot mixture is called a Mirepoix. Good foundation for dishes including sauces, soups, meat dishes, and other recipes. One of the first things I learned in culinary school. Usually all the veggies are cut up into a small dice. I wasn't allowed to graduate my first year of school not knowing how to cut an onion for example a fast pace at a mince, small dice, medium dice, large dice; and also making a roux.
I thought Mirepoix is French but Italian Bolgnaise uses a Soffitto.
I call it trinity😮

I throw in some cinnamon, bay leaves, basil and some crushed red pepper for a little heat..also a couple of knobs of butter before serving.

Looks interesting. I wish I could smell it. One of many recipes to test.
A few times when I've made Bolognese, I ran the aromatics through a food processor to almost puree them just to change things up to see how it changed the texture. They cooked down much faster too so I couldn't let it go unattended very much. It was a very good batch. Big ups bruh....you even added what my mom and I call the secret ingredient. If I ever see you on the street, I'll have to mention that. Not many use it. I seem to recall using a smidge of heavy cream in the past but that was because I just had some around. I think it's how they do it on Bologna. It's not something I usually have on-hand. It helps counter that acid from the tomato even though San Marzanos don't have as much as other varieties. i also use red wine mostly. I guess because as a kid, when we lived in Italy, I remember my mom using red wine all the time. I have used white once or twice but the way you reacted, I may have to use it more often.
Would love to know your original recipe! I have just tried this and love it, but would love a great original to compare. This one was killer, especially after mashing some carrots/celery into the mix once it simmered down. Flavor was EXTREMELY rich and out of this world. I also used Sherry because otherwise I only had red wines, but it was fabulous and I'd love to play around with the wines and salt amount/salt types!

Interesting, can't wait to try this one. Butter is a Dairy product as well and a lot of people use that in tomato sauces, so I don't see what the problem would be.

Shouldn't the milk and cream both be added near the end to prevent curdling? 3-4 hours seems like a long time to cook milk. GREAT recipe though. I am making this for dinner tonight as I type. Keep 'em coming AB!!
You can not add dairy and replace the pork and it’s still a delicious method! I hope everyone tries.

@@funkenassar5181I'm just going to leave out the bacon and use more ground beef in place of the ground pork, but definitely going to try this recipe.
@@funkenassar5181 im not anti pork...i just make a "healthy" version of this by using chicken or turkey hot italian sausage (using that to get the oil), and then ground chicken or turkey as the second protein...I still use parm cheese...but i add fresh basil, and remove the milk...I also use zucchini noodles rather than regular pasta...everything else I do just like him. I have also made this with bacon...ground beef...veal....and pork....you can also use lamb and veal as well as a good alternative. i personally dont mix like beef and chicken bc i dont like how that tastes, it tastes like dog food to me.
I typically use Cabernet Sauvignon for the wine instead of White wine, though I’m always willing to try anything once to see how it differs.
