As a NYer, this was a valiant attempt bro🙏🏾-A few points: the bodegas chop the patty a little more finely and the bread is a little different (likely from bakery). Also, the sandwich is rolled right and tight, the contents don’t spill out the sides. (All these points may seem like a nitpick but I swear they affect the flavor profile).
AB almost made me bite my iPad while watching this video. Those buns was toasted to perfection. Asked on comments a lot of folks didn’t know about using mayo. I am over 50 and since a child, using mayo to toast bread make grilled cheese, etc. was normal.
This is awesome…one of the best sandwiches ever cooked on a griddle…I put some stoplight peppers in mine to give it some color…lip-smackin’ good groceries right there, my friend!!!!!
I love chopped cheese sandwiches. I like to do mine with bell peppers and a Colby jack cheese. I also use a brioche baguette for the bread. I like the how the baguette gets crunchy
I made this for dinner tonight. Super easy and really delicious! I toasted the bread with mayo for the first time and I will forever more eat all my hot sandwiches this way! Game changer!
I've been doing that after working for a hamburger stand 50 years ago. Use it with your tuna sandwich, put mayo on the outside of your bread and grill that side.👍
@@DeRicardo4980 Funny thing is, I don't like salad on my cheeseburger. But if I want lettuce and tomato, I make a chopped cheese. It IS special, and all about the seasoning.
You know what I like about this? The rolls. Lots of other folks use these hand made or artisan rolls that I can't easily find. The rolls he uses are what I would find in my grocery store so using real world items is what I'm talking about. Good man.
As someone with family in the Bronx and Harlem but literally like 15 minutes away from you...AWESOME. Simpler is better. It's not meant to be some overly fancy sandwich like some of these gentrifiers be making it.
I've heard so much about the famous chopped cheese sandwich out of the city, I've never made one but New York sells them. After this recipe I think I am going to give this a shot. Thank you for the delicious sandwich recipe
Thank you brother! You have help me time after time with your delicious recipe. Your style of cooking is very different from the rest and I even get a laugh out ever now and then keep up the good work you are amazing.
AB, you are the man. I have tried so many of your recipes and simply love them. My husband says my food is different, I know he means delicious, because I can see how he eats more and doesn't hesitate to come to the table at dinner. It's all because of your channel. You rock!

I’d put ketchup on the bread also and along with onions, I’d fry up some green and red peppers and some mushrooms! I’m from Harlem, by the way, it’s a village in NYC, born and raised!
Sir I just recently joined the military and I was getting tired or eating the same meals everyday and man you have helped a brotha out I really appreciate what you do and I have learned so much
Mr. AB!!!! I watched you make the Chopped Cheese and dropped everything. I could taste it in my mind, and just needed to take a bite. Ran to Kroger for the fixings and it was ON!!! I’ve seen you cook many other visibly delicious dishes but this one hit at the right (hungry) time!!!! 😊 Mine was delicious as well.
Wraping it in sandwich paper than aluminum foil and letting all come together for 5-10 mins will help bring it all together and take this too the next level.
This chopped cheese recipe looks so good! I'm not the biggest cook but I have been learning to make better recipes off of your channel. Continue to simplify these recipes and get the mystery out of cookin!!!!
GREAT VIDEO & RECIPE! I would like to put a cup of chopped red & a cup gren peppers. When folding the sandwich together I'd cover the cooked ground beef, onion, bell pepper & cheese with room temperature cheese slices just to hold it all together then dress the lettuce & tomato 🍅 😋. Once again inspirational recipe.
Ab looks amazing!! As someone who works in ny I have had alot of these!! Here is a little hint...try and hit it with a touch of oil amd vinegar on top the lettuce and tomato. Add another layer of flavor!!
I switched to the mayo to brown the bread or buns, I was like what all these years butter but I gotta say the mayo just works‼️ Thanks AB you’re the best

I was thinking to myself man it’s hard to watch when you’re hungry you make cooking look easy and fun, you don’t get overly complicated, keep it up
I keep seeing that griddle style grill on all these social post now but they way to big for us Condo/apartment folk. I put a cast iron on my regular charcoal grill and it came out amazing, i've never done that before but it works and this a good recipe.
You did the chop cheese justice, only thing missing was wrapping the sandwhich up in paper and foil to give it structure and have the bread soak up all the juices.
I've done something like this with pork tenderloin that sat in crockpot. Shred it for the griddle, onions like you, pepper jack cheese instead, tomatoes and shredded cabbage that has also been griddle just a little.
Exactly. I am a born and raised New Yorker and it also depends on which and what bodega you can get the best chopped cheese sandwich. Not every bodega makes the best chopped cheese.
@ 10:30 I agree with you AB, that chopped cheese dont need anymore kinda sauce or anything. When I was younger I might`ve threw some mustard and a bit of mayo on there but over the years experience has taught me that there are recipes whose core ingredients and *intent* are to do it this way and I`m very thankful to have reached this level of knowing how to eat it that way that it is intended for 😋
That grilled mayo thing is legit. I also use it for grilled chicken and steak to sear nicely. Sounded crazy when i first heard of it but I swear by it after trying.

facts you on point with this one
Yup, also he didn't get a bodega cat to walk on the bread.
Missing the pickles too
Bro missing one important fact...
He ain't the ock😂
This is exactly like a home cook would do it. Bodegas wrap tightly because they are made to take out.

Yeah the mayo trick is so good. I won't make grilled chicken breast any other way now either. So much better than oil for non-stick and good browning
