It's the software you have to worry about the most, not the hardware. You can easily take a pin to a microphone port, or cover cameras with a small piece of tape. But even just using the stock Google keyboard on an Android device harvests your data and input and sends it through a backdoor to create personal search and ad results. No way you could bypass that with a Chinese phone.
Even the hardware you have to worry about. Intel has a management processor that takes priority over your main CPU (and thus bypassing your kernel). It can make network requests, access ur disk, etc. So yeah, hardware itself also has spyware.
