Assuming you brought the syrup to the correct temperature, the other big trick is to use the correct syrup to egg white ratio. It’s very easy to assume that all the syrup must be used in the egg white, but this is where intuition and experimentation comes into play. Learning when it reaches the correct consistency takes practice. Not all egg whites need the full amount of syrup and adding too much will make your nougat too soft. Even factors such as humidity can affect how much syrup you’ll need. It’s best to go real slow when you’re at the last bit of syrup and make your determination.
I think this happened because you under stirred it when you mixed everything together with the egg. And it’s also supposed to be in the fridge for about 12 hours
