I recognize the speaker and she has done well in the past and I do not mean to be rude, but I couldn't understand the speaker in this video. Her prosody is abstract, like a "valley girl" but random. It is as if she is simply reading words; like a 6th grader being asked to read aloud, unaware of what the context is and unable to comprehend the sentences as they are reading them; and constantly tagging on sentence endings and subsequent sentences: 0:18, or simply speaking too fast to be understood: 0:34 (I have no clue what she says here). However, since I produce videos myself, I can assure you that it's difficult to do voice-overs and make them sound as exciting as a person speaking to a camera. The fact that they aren't clarifying shows me that they don't care and/or are unsure about what they are talking about. It seems that we are guaranteed a 10% loss due to microwaving, which is the best method, but we are also guaranteed to get all the nutrients, if we drink the soup/sauce? What about baking? I voted down the video.
One thing to keep in mind is desireability. If you (or your kids) hate raw carrots, then it is much better to get the 65% vitamin A from steamed or sauteed carrots. The other thing is to eat a wide assortment of vegetables each day..... it is no crime to get 50% of the avilable vitamins and minerals from your food if you are eating 400% of the recommended amounts. It is much easier to get 400% when you are cooking vegetables in the way you or your family enjoys them. Ironically, the worst way to cook vegetables is to boil them, which usually makes them less desireable anyway.. learn to steam and sautee.
What about using a cover on the saute / frying pan? Probably not recommended for nonstickfrying pans, since the coating can get damaged by the heated cover on the pan, but should work for cast iron pans.
People need to stop thinking salads are healthy. Just look at the minimum amount of vegetables you eat relative to stir frying, which also releases more nutrients. Also you don’t get random bacteria poisoning

Its more of more of the way the various vitamins, minerals and other nutrients react to different storage/cooking methods. As long as you are relatively healthy just eat a wide range of fruits and veggies in as many different ways you can find. I recent found out that nutrient absorption is another factor. I had a bleeding ulcer and needed to maximize my iron intake and absorption. So that's how I found out that calcium and iron interfere with each others absorption. That is a controversial statement and I can only speak to my experience. I had to monitor my nutrient levels fairly closely for a while and with my body it did seem to hold true.
fat and cholesterol are good for you. it does not cause heart attacks you stressed the word "little" when saying that its healthy to eat "good fat" eating LOTS of healthy fats is actually the most healthy diet possible for humans.

Samuel K. Mix in a little salt, pepper, rosemary, and/or garlic. Perhaps some olive oil as well.
