I could be wrong but I've always assumed its the milk. Caramel is usually just sugar and sometimes water where as toffee contains a milk product and often butter. Take this with a grain of salt though, i could absolutely have made this up in my mind 🤣

When I was in London in 2016 I got a Banoffee cupcake from Crumbs and Doilies and ate it by the Peter Pan statue in Kensington Gardens. It’s one of my favorite memories of that holiday. Thank you for this recipe so I can try to make them at home!

You probably have some kind of "darker" sugar. By darker I mean colour. We neither in Finland don't have soft brown sugar but we have different sugars that have similitaries with it so I usually use what I have in kitchen at the moment. Try different kinds and find what you like the most!😊
Der braune zucker von Südzucker ist weich! Nehme den auch für Cookies immer :) Ansonsten gibt's weichen braunen Zucker in Asia Läden. Oder du machst ihn selbst. Kaufst Melasse im Bioladen und mischst sie mit weissem Zucker. Rezept dazu kannst du googlen. :)
If you have white granulated sugar or caster sugar, and molasses (treacle) you can make your own light brown sugar. Mix 1 tbsp molasses per cup of white sugar for light brown and double the molasses for dark brown. I’ve seen another recipe that is as little as one tsp molasses, so maybe mix in half the amount and see how the color and flavor seem. Various types of molasses are darker or lighter, thicker or thinner, than others.
hi :) wir wissen dein kommentar ist schon eine weile her vielleicht hast du in der zwischenzeit längst eine lösung gefunden :) aber den flauschigen braunen zucker bekommst du bei dm, 500g für 2.45€. ansonsten funktioniert das mit der melasse auch ganz gut dazu hat jemma inzwischen auch ein video. du kannst auch braunen zucker nehmen wie unten vorgeschlagen allerdings ist der immer etwas gröber also noch gröber als normaler zucker den man zum backen nimmt.

For drizzling I like to loosen up the toffee with some heavy cream while warming it up slightly so it doesn't stiffen up again too much :)
