1/2 onion + carrot + celery = Italian 🇮🇹 sofrito, the base ingredients of a Ragu and many other Italian meat dishes. No one’s Italian nonna ever put olive oil in the pasta water. Although some pasta is dressed with a little olive oil, on the plate, after it is cooked (always al dente) … and remember, never ever put cream in pasta alla carbonara : No cream, please 🙏 ☮️😀
Yum lots garlic....that spaghetti looked yummy...Now i have to have garlic toast with that...and a glass of chocolate milk....sorry about the vacation...Have a wonderful weekend...
Found the videos on Amazon during the pandemic. You helped get through many sleepless nights. Very soothing and therapeutic during a rough patch. Many thanks. The cooking segments have come to be some of my favorites. A few pro-tips I've picked-up over many years: -Do get the pan hot before adding the oil and get the oil hot before adding the veg. The heat will allow the veg to cook without absorbing the oil and also help the pan from sticking. -Before draining the pasta, add a tablespoon or so of the pasta water to thicken the sauce. -A dash of olive oil to dress the drained pasta will keep it from sticking/clumping. -100% agree on the aromatics (carrots, celery, and onions - the holy trinity. Hello Kevin, you are a natural presenter and your videos are so well produced. As an old narrow boater and live aboard-er' I love seeing the canals presented by you fourty odd years on from when I was on the cut. So many changes and busy these days!
My habit is to watch TBN right before bed. The excellent camera work, slow pace and gorgeous scenery is calming and creates a good mind set. I've watched all your vids twice and I've been itchy for some new footage, so I checked out a few of the other narrowboat vloggers. TBN is by far my favorite. There's something about the pace, scenery and camera work, plus the background of Aslan's heartbeat and the lack of extraneous chatter that hits all the right notes. It's obvious that you love the life you've chosen. It's a perfect foil for your creative abilities. I'll be very glad to see your new seasons.

Tip from my Italian family, put a carrot or celery into your sauce to reduce acid and establish a natural sweetness.
