SMOKED MUSSELS & RADLER - MOULES ECLADE

  • The first time I tried this it blew my mind.... The smoke flavor from pine needle tree is amazing in combination withe the mussels and the radler.
    Expertise level: Novice
    Total cooking time: 55 minutes
    Preparation time 35 minutes
    Cooking time 20 minutes
    Ingredients:
    Fresh mussels in the shell - 2 kg
    Dried pine needles - 3 or 4 small branches
    Radler or shandy - 1 bottle
    lemon and lime slices - 5 slices
    Salt and pepper Cookies - to taste
    Suggested tools
    Grill skillet - amzn.to/1ExFq1o
    Lemon squeezer - amzn.to/1VvxfXR
    American Deerskin welding gloves - amzn.to/1JxmTPD
    Planning & Schedule:
    55m - Start up your barbecue for direct grilling.
    25m - Place the pine needle in the grill pan and the mussels on top
    20m - Grill the mussels until they open up
    10m - Smoke the mussels by putting a lit on the mussels
    4m - Sprinkle on the lime and lemon juice
    3m - Sprinkle on some salt and pepper
    2m Sprinkle on some radler
    0m - Poor a radler and enjoy the feast

      It's the only thing I would ever smoke with pine needles.

    Can you use the smoke from the pine needles for pork, beef or deer & would it give it a good flavour

    that looks great. I had something like this a few years ago. It was at an outdoor retreat and they piled up the mussels in a pile and covered in pine needles and just lit it on fire. They tasted great.

    Mussels looked great Roel! I've never heard of smoking anything with pine needles. That is a first for me :)

      +Khalil.B. Saket Thanks. It actually is a traditional recipe from france.. moules eclade. The pine needles are not more poiseness then the smoke wood we use in other recipes.
