How To Wrap Zongzi / Sticky Rice Dumplings 粽子的做法

  • Zongzi / Sticky Rice Dumplings/ bak chang / Joong is a traditional Chinese food for Dragon Boat Festival. There are many ways to wrap zongzi. This method features large zongzi, which is especially good for making savory zongzi with various fillings.
    Glutinous Rice Fillings:
    glutinous rice 600g (3 cups)
    light soy sauce 10g (2 tsp)
    dark soy sauce 6g (1 tsp)
    salt 1g (¼ tsp)
    oil 5g (2 tsp)
    Split Mung Bean Fillings:
    split mung beans 230g (1 cup+3 tbsp)
    sugar 12g (1 tbsp)
    pork:
    pork belly 280g (2 cups)
    Huadiao Cooking Wine 6g (½ tbsp)
    salt 3g (1 tsp)
    sugar 3g (1 tsp)
    light soy sauce 8g (½ tbsp)
    dark soy sauce 4g (1 tsp)
    red fermented bean curd 5g (1½ tsp)
    red fermented bean curd sauce 3g (1 tsp)
    oil 5g (1 tsp)
    salted duck egg yolks 6 whole
    bamboo leaves 48 pieces
    cotton twine 5 meters

    I don’t have a pressure cooker, what can I use? Also can I use banana leaves?

      Hi, you can also use regular pot. Best to use thick bottomed pot. Or put a plate on the bottom of the pot. Bring water to a boil and put all the zongzi in, let simmer for 3 hours and half to 4 hours with lid on. Turn off the heat and let sit in the pot for a few hours before serve. I have never tried with banana leaves for this recipe.

      这个包法不难啊。不需要转来转去的,所以一般不容易漏米。你那里现在热起来了吧?
