As someone who unfortunately has had to deal with alcoholics in my family in the past, this is EXACTLY how they often behave. The over-the-top shouting, saying random, stupid things to people, going from cold to hot in a split second while sweating like red-faced hog...it's just ugly and Morales nailed it here.
Fun Fact: On the Blu-ray edition of La Bamba there’re several deleted scenes not released priorly on DVD. There’s one filmed during this fight scene after Bob is punched where Richie’s “Flying Guitar” unhooks itself from the shoulder strap, flies down to Bob, knocks out the guy who punched him, then Bob jumps on the guitar before it flies him away to rehab for nine weeks followed by helping him send away for correspondence cartoon courses and smacking around Rosie so he could study in quiet. It was cut from the final film because the director thought it was too unbelievable even though it made the movie less accurate.
