@@jcwalker722 aye! He did. I briefly mentioned why I didn't do that, mostly because it was a new York cut of meat which is super tender on its own. I may revisit this recipe with Chuck or too round and pound it out/score it.
Just so you know, Food Wars has a professional chef on staff that creates these recipes. That is why the food science, technique, and recipes make sense and can actually be done.

Dude, I just made this yesterday. Though I didn't know that the plums should be salty. I went for a slightly sweet taste with a bit of sugar since the plums here don't ripe well. Damn climate. But I brought the leftovers to my friends today and they absolutely loved it. Some were even considering to rip their clothes off.

One of best ways I cooked a steak was I wrapped it in tinfoil with mushrooms, garlic, and onions and chucked it all into my grandma's wood stove. I should've gauged the temperature of the stove a little better because the mushrooms/onions got burnt to a crisp. The steak survived, and while I know that people get a little uppity about steak being well done... it still came out pretty nice.
I realize now I should have waited for the wood to burn up and cook them on the coals rather than the actual wood itself, but it was fun... albeit a tad dangerous.

We only eat it well done in my family. I don't think anybody's ever made meat that was not well done over here. That is why I do not understand why people might get uppity about it. Can somebody explain it to me. I genuinely do not get it. I hope you enjoyed your steak. It sounds very delicious.
Older folks usually have it well done for safety concerns, because they can't be really sure about the cleanness/ hygiene of meat processing/ handling. Never had medium/ rare cooked meat before, but AFAIK medium/ rare steak had better texture and meat taste. They also used more softer part of meat, which had mostly unworked meat and fat instead of, say, collagen, so they cook more easily, and further cooking (read: well done) would make the whole meat a bit too stringy to chew.
Me? I'm happy enough with well-done breaded chicken and fried spiced mutton, thank you very much.
@@timachan8887 Medium rare and rare steak feels like a crunchy cereal bar with juice inside. If you bite it with your molar teeth it feels kind of crunchy and very easily chewable. The flavor is also different, tastes like saltwater with a very small amount of vinegar
It feels like chopping the onions finer would have helped in bringing out the juices to help with the marination.
Have to say, the miso paste addition sounds great!

I just make this today and holy whack he ain't joking this is really easy and so delicious. Thanks for the great video Chef PK I'm absolutely going to be making more dishes from your channel! I had to sub red wine vinegar and didn't have any corn starch but its still amazing can't wait to follow it to a T next time.
I really like this format where you recreate the recipe exactly as it was in the anime, but then you also do a version elevated with your own tastes. The comparison is interesting to see.
When I started watching Food Wars, I thoroughly enjoyed the cooking and ideas, but as a non-chef I thought this was some over the top nonsense.
Seeing someone of your knowledge actually break it down and confirm what's going on makes it so much more enjoyable; and you are nothing but an inspiration to test these out myself.

Oh yes, make sure you set aside some time to do long sous vide's with some of the tougher cuts of beef. Being able to cook a tough steak for 48 hours without it cooking past medium rare, that can net some incredible results.

I made this before because I LOVE steak. First had steak at the age of 21 and I realized I missed out on so much XD Plus this dish helped me gain respect for eating onions more instead of picking them off. Also thank you for the tip about the onion's effects on the discoloration of the meat.

couple years ago, i tried it with red onion and cooked the onion in the red wine and shoyu glaze. soaked it up real good and now i do it every time

I’ve made this rice bowl before but with a few different ingredients. Since I can’t get pickled plum paste, I made my own Sweet and Sour Plum Sauce. It always turns out amazing and I just want to keep eating more.
Damn made the mistake of watching this before lunch and now i am starving. Great job chef and grats on breaking 30k subs can't wait for more so see ya on Monday.

Started watching Food Wars after watching your Gotcha pork roast, so now I'm even happier to see you upload these recipes.
One thing I also found when making this dish based off the of episode instructions. All of the components didn’t seem really that great. But once the dish was fully constructed, it was mind blowingly good. This dish was one of those examples where the sum of it’s parts weren’t as good as it’s whole.
Made that recipe with a few tweaks.
1. Cauli rice.
2. Sweet beats thinly chopped. (Couldn't find plums in town at the time and I was getting really hungry).
Final result : the cauli/onions mix was fantastic and the sweetness of the beats brightened the earthiness of the whole dish. Would make an entire batch again.
Steak 3 ways dependong on the season.
Air Fry: Ribeye seasoned with Kosher salt, 400F for 10 minutes fresh. 15 minutes frozen.
Grilled: Ribeye seasoned with Kosher salt, let it come to room temp and grill over very hot oak charcoal for about 4 to 5 minutes.
Sous Vide: 130F the bath for up to an hour, brown in skillet.
One of the early shokugeki's when I first found your channel I thought you might have overlooked it in favor of one of the more flashy conflicts. Glad it wasn't missed.
I love sous vide. It is such a great cooking technique and it makes everything so tender. I know you used a chefs knife so it doesn't come through clearly but I've made filet mignon sous vide several times and you can literally cut it with a butter knife.
Thanks chef! this helped me to learn how to tenderize a steak.
My favorite way to cook steak is to broil it in a cast iron with a stick of garlic butter on top with some partially roasted gold potatoes around it, at around 425 degrees. For seasoning I usually just do Weber Steak 'N Chop seasoning with some rubbed sage on both sides.

for crunchy onions after you've browned them in the pan take em out let them cool and toss them with some corn or potato starch and deep fry em.

i tried cooking this after watching your video. and threw in some butter, garlic and thyme to finish the steak. I also added sake when making the sauce, why not. ended up pretty G. It was fun playing with food.

I like to mince the onions before i coat my steaks with them. it allows the onion to caramelize not only faster but also more evenly
Been using a Sous Vide for a couple months now... Best steaks and pork chops of my life. Currently making a Barbacoa, my first multi-day cook, doing a solid 36-40 hours.
I tried this recipie! I didnt have access to pickled plum. Curse small towns. But i decided to try a spice mix in the rice as it cooked. It was a little spicy but very tasty!
I discovered your channel the other day and spent the last few days binging your Food Wars reactions. Ive been a fan of it for a while and it was really interesting seeing a Chefs take on the series. I’ve always wanted to try making some of the recipes from the show so these kinds of videos are helpful and appreciated!

I love umeboshi! I like in southern CA so it is so easy to find here at Mitsuwa (Japanese Market). They are like the best sour patch kids (except really expensive and plum flavored). I try to save them in my fridge because they keep so well and are great on plain rice, but I always end up snacking on them!
I miss Mitsuwa but I'm glad we have Uwajimaya :)

Yo! This is awesome! Not only that, but your passion for food rekindled my hunger for food knowledge. A few days ago, my chef yelled at us in a class because none of us wanted to learn and just talk or mess around, and it made me wonder if I truly should be a chef since I do tend to get nervous during a practical.
But ever seeing your vids, I can say I’m starving for knowledge again and to be a chef again. Though the change may seem sudden, I feel more confident to say I’m willing to go head first in my goal to be a chef. I felt like I learned a lot more, but I know there’s more to learn.

So happy you did this one. I laughed so hard when your sweetie snicked your bowl. My favorite way of doing steak is actually Gordon Ramsay's method with oil cooking it both sides just salt and pepper and then adding in garlic and herbs and pouring the garlic herb butter over top of the steak. The first steak that my husband really liked was it LongHorn Steakhouse and it was a filet mignon I've tried to do stake here at home since then and he says it's close but not on par.
That's definitely a tried and true method!

I’ve made this dish a few times. All times were awesome. I used a single onion per steak and the steak I used was the cheapest steaks I could find. They were just $3 bottom round steaks.
I left the onions on the steak for 24 hours. Otherwise I did everything the same as the episode.
I haven't made the Chaliapin Steak as it was in the show, but I used the idea of the onions with a beef liver and slightly caramelized onions with the rice and the pickled plums. It was an ok meal and I enjoyed it.
I will try it with a steak next.
