The only problem with veganizing dessert matzah is if you're Ashkenazi and avoid kitniyot. Almost all the vegan butter I have seen in stores near me is soy based, and Ashkenazi communities traditionally avoid soy. (I eat kitniyot but most of my friends don't).

So much fun to watch! Yes, I unfortunately tried Just Egg this year (flaxseed egg last year) and the matzo ball disintegrated! I will need to try this method next year. I make a similar charoset recipe by first blending dates and walnuts into a paste. Then I combine that with diced apples, red wine, cinnamon, nutmeg, and salt. Best if you let it sit in the fridge overnight.

It took me quite a while to find a matzo ball recipe that we were happy with and that tasted like what we remembered them tasting like. I actually use tofu in mine. I am originally from brooklyn and spent many Jewish holidays with friend's families. I miss all of the traditional passover foods. I am definitely going to try all of these. I think the vinegar in the "brisket" sauce might not be needed. I think it is mostly to tenderize the meat. I'll probably try different mushrooms, I'm not a fan of Jack fruit at all!

Y'all should look up Perisan charoset. Similar to this one but with dates, banana, pomegranate syrup along and some other ingredients. It's blended in a food processor to create the "mud" Super delicious and nutritious! I sometimes roll the "mud" into energy balls with oats too.

This is awesome!!! Thanks for the veggie sorcery yall! I was relieved you didn't try to make a seitan brisket as it's not kosher for passover. Not being able to have gluten on the holiday adds an extra layer of impossibility for the vegans so jackfruit always appealed to me!! I think impossible meat is not grain free but we vegans can only do out best ♡
Funny story… I brought Charoset over to a Passover dinner (I am Jewish and vegan) And instead of cinnamon, I accidentally added cayenne (SO MUCH), and it was so unbelievably hot! I had to warn the whole table not to eat it… Although I was able to eat it because I love hot things😂😂😂
You might have better luck with maitake (hen-of-the-woods) rather than oyster mushrooms. It's more tender and less squeaky, but it still has a meatlike stringiness, and it's very savory without a seafood note.

It is EXTREMELY sweet lol. You can get other "kosher for passover" wine that's better to drink. If you want to make Charoset just to try it, any sweet red wine will really do the trick. You can make it with a dryer wine, but I'd say just use a splash of it.

Maneschevitz wine should say Kosher for Passover, even matzoh ball soup is not necessarily kosher for Passover. Maybe not for you but others trying it..Vegan food is inherently kosher, but not necessarily for Passover, A for effort

The only problem with veganizing dessert matzah is if you're Ashkenazi and avoid kitniyot. Almost all the vegan butter I have seen in stores near me is soy based, and Ashkenazi communities traditionally avoid soy. (I eat kitniyot but most of my friends don't).

Our family tradition is to put matzo balls in every soup. My favourite is tomato cabbage soup with matzo balls.
I am originally from brooklyn and spent many Jewish holidays with friend's families. I miss all of the traditional passover foods. I am definitely going to try all of these. I think the vinegar in the "brisket" sauce might not be needed. I think it is mostly to tenderize the meat. I'll probably try different mushrooms, I'm not a fan of Jack fruit at all!

If you do not mind me sharing; abstinence (self-control), exercise, fresh air, nutrition, rest, trust in GOD and water are the laws of health, which if adhered to, will help one live longer. Touching on nutrition, i would recommend opting for an organic, well-planned, unrefined and untempered with vegan diet (preferably consuming fruits, nuts and vegetables in their raw form so as not to denature or destroy the life-forces and enzymatic activities) consisting of organic fruits, vegetables, legumes, nuts, seeds and whole-grains which provides mankind with ultimate health and longevity, i believe, based on experience too. If 'properly planned', it provides the system with the required calcium, carbohydrates, essential vitamins, fats, fibre, minerals, protein and water required to make good blood and enjoy health.
Moreover, i would also recommend to consume colloidal silver (avoid consuming too much according to gathered information) or colloidal gold if one can (avoiding purchasing from other countries as it may deplete in quality during transportation based on gathered information too).
If you are one that grows indoor plants or would like to, i would recommend to opt for organic, vegan and peat-free compost, as well as organic liquid feed that does not contain sea weed due to radiation in the seas, i believe. This is awesome!!! Thanks for the veggie sorcery yall! I was relieved you didn't try to make a seitan brisket as it's not kosher for passover. Not being able to have gluten on the holiday adds an extra layer of impossibility for the vegans so jackfruit always appealed to me!! I think impossible meat is not grain free but we vegans can only do out best ♡

Funny story… I brought Charoset over to a Passover dinner (I am Jewish and vegan) And instead of cinnamon, I accidentally added cayenne (SO MUCH), and it was so unbelievably hot! I had to warn the whole table not to eat it… Although I was able to eat it because I love hot things😂😂😂
You might have better luck with maitake (hen-of-the-woods) rather than oyster mushrooms. It's more tender and less squeaky, but it still has a meatlike stringiness, and it's very savory without a seafood note.

The other packet in the boxed matzo ball soup mix was for the "broth" part of the soup. It wasn't a 2nd packet for balls :)

What dishes at the passover table were already vegan eg: bread, rice, dips and vegetable dishes?
During Passover you don't eat leavened bread, only matzo and matzo flour, and you don't eat other grains. Depending on Sephardic or Ashkenazi tradition you also won't eat legumes or rice. It's traditionally a very meat heavy holiday.

Second comment.. Is manischewitz wine good to just drink? or is it mostly cooked with?
It is EXTREMELY sweet lol. You can get other "kosher for passover" wine that's better to drink. If you want to make Charoset just to try it, any sweet red wine will really do the trick. You can make it with a dryer wine, but I'd say just use a splash of it.
It's almost like syrup it is so sweet, but people do drink it

I don't know whether it means that much to you, but a lot of the things you maybe thought were ok for Passover were not. Maneschevitz wine should say Kosher for Passover, even matzoh ball soup is not necessarily kosher for Passover. Maybe not for you but others trying it..Vegan food is inherently kosher, but not necessarily for Passover, A for effort
