It's a BOLD BAKING breakfast fiesta! This week, I show you how to make homemade Churro Waffles with a rich, chocolate sauce. Why make just regular waffles when you can make them over-the-top, BIG and BOLD?! AND in this episode, I'm excited to introduce you to my new puppy, Waffles. I hope you enjoy them both.

Churro Waffles with Chocolate Sauce
INGREDIENTS
For the Waffles
3 cups all-purpose flour
1 Tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
¼ cup sugar
2/3 cups canola oil
4 large eggs
2 teaspoons vanilla extract
2½ cups buttermilk
Churro topping - Cinnamon Sugar
½ Cup of Sugar
¼ Cup ground Cinnamon
½ Melted Butter
Chocolate Ganache (Sauce)
8 ounces semisweet or bittersweet chocolate (we like 72 percent cacao)
1 cup heavy cream
Start by making the Waffle Batter:
1. In a large bowl combine flour, baking powder, baking soda, salt and sugar.
2. In a jug, whisk together eggs, oil, buttermilk and vanilla extract.
3. Whisk to spell out W.A.F.F.L.E.S, or 7 times roughly. A few Lumps and bumps are all good. Just like pancake batter, they work themselves out while the batter rests
4. Refrigerate for 10-20 minutes and get working on your sauce and cinnamon sugar.
For the Chocolate Ganache
1. Heat the cream until it is about to boil, then turn it off
2. Pour over the chopped chocolate and whisk until smooth and shiny. Set aside until needed
To make the Churro topping
1. Melt the butter and set aside
2. Mix the cinnamon and sugar in a bowl together until well combined.
METHOD
Pre-heat your waffle iron to medium heat. Grease with butter
Spoon the batter into a preheated waffle iron.
Cook the waffles until golden and crisp. (all waffle irons are different but roughly around 3-4 minutes)
TIP: Resist the urge to open the waffle iron while cooking so you don't let out all that lovely steam that will give you a chrisp, brown waffle
Once fully cooked immediately brush with melted butter and sprinkle over you cinnamon sugar. Turn over and do the same on the other side. Don't be shy with the cinnamon sugar, it's the best part.
Drizzle over the warm, rich chocolate sauce to get that full Churro experience. If you are feeling extra BOLD then finish with freshly whipped cream like I did!!

I had a taste for these tonight (no rule that waffles have to be only for breakfast, right). But when I hear churro, I automatically think dessert. We sprinkle the cinnamon sugar, cut them into quarters and serve with a small scoop of ice cream and your chocolate sauce! Delicious!!!

I found a 10 euro second hand moulinex waffle maker and I have my own chickens and get raw organic milk and cream from a friend with a dairy. I followed your recipe and I just made the best treat I have ever had. I chose to leave the cities and make a life as an ex pat from the UK in the wilderness of Finland. I have to say I only missed some of the treats you could get from the cities....now I have realised I have a much better life here in the countryside and nature...but with the sophistication of having some amazing tasty treats to enjoy in the paradise I have here! Hey so I tried this recipe but replaced buttermilk with melted butter and it came out pretty gooooood. I left it in the refrigerator for 20 min then as I placed to cook I kept the remaining dough refrigerated until all the dough finished cooking. Lovely recipe . Thanks so much. Oh I replaced the butter milk cause am highly allergic to milk.

Gemma Stafford 😄 I guess that's the way moms are LOL. I seem to be having more of a problem with my youngest sister Adrienne who is 14 years younger than me. My mom was a single mother so I had to help out a lot. Which I would never change for a second. The problem is I am the one not my mom who gets all the eye-rolling! LOL especially if I try to say something about my niece. I was teaching 3rd grade, but when I worked my way through college I taught Nursery School which are three and four-year-olds. The exact age of my niece. If I say to adri, you know she's very advanced... Then the eye-rolling starts LOL. It sometimes feels like I've had a teenager only who is in their late twenties rebelling against me hahaha.

love love love love this waffle receipe. This is so far the best waffle I have tried, homemade or store brought. I love the density of this waffle and it is intense but still fluffy. It is for a real treat not something you will get in a cafe (fluffy because it is holes in the middle!! they are not satisfying). This receipe is amazing. Although I didnt replicate the choc topping becasue I dont overdose myself with too much carolies. But I do have spinkle a good amount of cinnamon sugar and maple syrup. It is great even you eat it plain. I freeze them and retoast them in a toaster, it just like freshly made!! Thanks Gemma.

Today trying your recipe really excited. I followed your butter milk recipe.which was only for one cup and the recipe calls for 21/2cup .later I mixed the rest of the milk. I hope it turns out fine. I will make it in the evening.

I will be doing this, but instead of chocolate I think I'll add dulce de leche sauce... In Mexico's streets you get churros filled with cajeta, which is a dulce de leche made of goat milk... So I think dulce de leche will make it feel more like home...

So i ended doing this... I'm not a waffle fan but i wanted to give it a try. OMG... This. So. F***ing. Good. And so easy to make ! I didnt do the chocolate sauce because i'm a lazy girl, let's be honest, but still, it was so good. Just so you know, i didnt have buttermilk so i used a mix of milk and lemon juice that i setted aside for 15min. It turned out great. I'm gonna bake some more for my friendzzzzzzz !!
