Hi Bold Bakers! Nutella recipes are some of your most popular requests so this week I'll show you how to make the best homemade Nutella. Plus, we'll make delicious crepes from scratch that you can enjoy for breakfast or any time of day. So let's get bold breakfast baking!

Homemade Nutella & Crepes
(Nutella recipe from bakecookeat.blo...)
INGREDIENTS
Crepes
½ Cup (100g/4oz) all purpose flour
1 eggs
pinch salt
1 ⅓ Cup (300ml/11floz) milk
1 tbsp (15g) melted butter
1. Put the flour and a pinch of salt into a large mixing bowl and make a well in the centre. Crack the eggs into the middle.
2. Pour in the the milk and start whisking from the centre, gradually drawing the flour into the egg and milk. Once all the flour is incorporated, whisk until it is smooth. Then whisk in the melted butter. 3. Add a little more milk if it is too stiff.
4. Rest your batter in the fridge for 30 minutes. This is an important step and yields better pancakes.
5. To cook: Heat the pan over a medium heat, then wipe it with butter.
Ladle some batter (roughly ⅓ cup/ 4 tablespoons) into the pan, tilting the pan to move the mixture around for a thin and even layer. then leave to cook, undisturbed, for about 30 secs.
6. If the pan is the right temperature, the pancake should turn golden underneath after about 45 secs and will be ready to turn.
Flipping pancakes: Hold the pan handle, ease a fish slice under the pancake, then quickly lift and flip it over. Make sure the pancake is lying flat against base of the pan with no folds, then cook for another 30 secs before turning out onto a warm plate. Continue with the rest of the batter, serving them as you cook or stack onto a plate. You can make them up to a day ahead and reheat them on the oven on in the oven.
Homemade Nutella
INGREDIENTS
1 generous cups /5 ¼ oz /150g hazelnuts
100g/4oz milk chocolate, melted and cooled
2 tbsp cocoa powder
1/2 cup/65g/21/4oz icing sugar
1/2 tsp vanilla extract
1 tbsp vegetable oil (or any flavorless oil)
METHOD
1. Roast at 200º C for 10-15 mins until very fragrant and well roasted.
2. Then rub them vigorously with a cloth towel to remove as much of the skins as possible.
3. Place the hazelnuts in a food processor and blend until it forms a very smooth peanut butter-like paste. This takes a little over 2 minutes.
Note: While it is processing make sure to scrape down the bowl so that all of the nuts get blended up well. You need the nut paste to be very smooth.
4. When the paste resembles peanut butter and is smooth and shiny on top then it is done. You need to get it smooth now so that your finished nutella will also be smooth
5. Next add in the remaining ingredients: Cocoa powder, icing sugar, cooled melted chocolate, vanilla extract and vegetable oil.
6. Continue blending all of these ingredients together for around another 90 seconds or so. Just like before, stop the machine to wipe down the sides to ensure everything is getting blended. When it is smooth and is lovely and shiny then it is done.
7. Store your Nutella in an airtight jar at room temperature for weeks.
Just tried the Nutella recipe, because I had some hazelnuts left from Christmas baking. And it turned out amazing! (I used semi sweet chocolate though). I tried it first and then compared it to some "real" Nutella, I had there. Your recipe tastes so much better. And this without palm oil :)

I always find it really curious that crepes seem like such a challenge in other parts of the world because here in Finland it's like the basics of the basics (called "letut") and almost everyone learns how to make them already as a child. I remember my late grandma made them every time she had visitors and would serve them with strawberries from her own little field

I made this and it's absolutely delicious! The idea of using melted chocolate I think makes it taste so good. I used less sugar but a bit more chocolate and hazelnuts in mine. I don't like Nutella itself anymore as it's so sweet and uses lots of unhealthy and unsustainable palm oil - now I can make my own better version! Thanks for the recipe!

Gemma, I started following your channel almost a month ago. I have never baked in my life but the way you present recipes is simply amazing. I learned quite a lot about different kinds of doughs and how it behaves under different circumstances. You explain everything with a clear logic. Here's a depressing story about my experience with Nutella xD
So when I was a child I had an allergy to pistachios and cashews. So Nutella and peanut butter were my go to spreads. Over the years I developed an allergy to most nuts including hazel nuts so now I can't eat Nutella anymore. I actually found out I was allergic to hazelnuts when I was eating Nutella. The only nut that I can eat now is peanut butter xD
Then end haha. So if you could make a giant recees peanut butter cup that would be amazing

No, haven't done it yet. But I certainly will in the near future...very near future. I just finished some Nutella and want to buy more, but the sugar content....that's why I'm going to use a delicious powdered sugar substitute or either half reg and half substituted p. sugar.
+systemfailure101 i have tried with just one teaspoon of brown soft sugar and it was great. Next time i avoid the sugar completely, cause the melted chocolate has sugar in it already ( i used dark chocolate 70%cocoa). definately worth the try
I might be a bit late but icing sugar is what we call powdered sugar in Ireland, I'm nearly certain they are the same thing just different names
Where I live we this is called pancakes, we eat them with sugar or blueberry jam. I love your recipes, it looks so easy when you're doing it.

Crepes are proper pancakes to me (I think it must be a UK and Ireland thing because of pancake day) and it is so true about the first pancake/crepe not working.

What do you mean by raw hazelnuts?
Already slightly toasted ones are just fine, as you roast them again anyways.
Just don't use anything with a coating with spices or sweet stuff around it.
The only thing you might be able to use are slightly salted hazelnuts, as a pinch of salt doesn't hurt anyways :)
SmilyLily1996 I can't seem to even find hazelnuts in general. Almonds and cashews are more easily found here. Haha! I've never tried looking for saltedd ones though! I'll try looking for them again! :) Thank you for your suggestion! :)

I know nuts aren't the easiest to find ingredient sometimes anyways and if you can find them they are often very overpriced.
I have no idea about the stores where you live, but I usually have the best chances to find thing like nuts in big amounts for little money in turkish food stores, maybe any food store with slightly oriental food could be a good place to look.
I also once found toasted corn kernels (yes, toasted not popped. No idea how they make those) in a kilo bag for under 2€ while you could get a handful on like markets and stuff for 3-4€.

Amy Amelyn Hazelnuts are hard to come by, and they are expensive in some countries. I'm delighted you noticed my plate. I got it at a street market in my hometown. I love looking at it.

Loved ur recipe.. my food processor cudnt grind the hazelnuts finely like u call for in the recipe so I had to move to a blender. The texture was a tad better after that. Another issue with the blender was that it heated up. I had to cool my mixture three times before whizzing to a fine paste. It was probably because of the quantity. Should double it next time.. Thank you so much. It tastes awesome💐😋... Love from India🇮🇳
