Mom was a farm girl, she started cooking at 11 yrs. old for 20 to 30 farmers during harvest time. She and her 4 sisters would go to whatever farm was harvesting and cook for all the men, that woman could cook up a storm. She always made drop dumplings for chicken n dumplings or beans n hocks stew. Nothing better than good old country cooking!

Hi! My grandma, originally from NC, USA, made the best chicken dumplings from scratch. Everything was always from scratch. I’m from VA, USA. This is my first time watching your show. Looks great. I also just watched your deviled eggs too. Just like my grandmas.
My mom dropped her dumplings and they were so good, she used baking powder in them so they would puff up and get fluffy! She also never stirred her chicken and dumplings, just put the lid back on the pot and steamed them. I always ate more dumplings than the chicken and broth! Thank you for the video Tammy and Chris!❤
@@tinathorpe2747 i don’t remember the measurements, flour, baking powder, salt, pepper and milk. Back then all we had was regular flour, but now I would use self rising. She was from the UK, a WWII bride, and did things a little differently in her cooking including using curry in her chicken stew.
My mom made chicken and dumplings all the time, when visiting her, we always requested it, so good, didn't use cream of chicken soup, did her own thing, so good.i miss my mom and her cooking 😢

Just what I was craving. I prep my chicken similar to how you do it, but I also add bay leaf while boiling the chicken. I've only done drop dumplings, but my husband makes it like his grandmother and does the dumplings like you do.
My Mother and all of my older sisters made roll out dumplings very similar to yours but without the cream of chicken. I saw a recipe with the cream of chicken so that's how I now make mine. BTW we were all born and raised in southern Georgia.
I made chicken & dumplings a few years back with your recipie where you cut them with fork like blender. They were amazing. I’ve made 2 or 3 times since & they never turned out right. Tonight I made them & they were also really good except a few of my dumplings were doughy. The flavor was amazing I used a frozen rotisserie chicken & cooked it in my home canned broth.

My mother and her sisters made chicken and dumplings by just using cool chicken broth and flour. They were fabulous. Every recipe I searched for has milk instead. Does anyone else just use chicken broth? They would add enough broth to flour to make a wet dough and then would turn it out on to a floured surface and work in enough flour to.make a dough that could be rolled out, cut and added to boiling chicken broth. The dumplings cooked until they were tender and were never stirred while cooking.
Absolutely that's how my Mom made them back in hills of SW Virginia. But the key to that was using her own home grown hen and boil it to pieces with skin on. The broth would be golden and rich in the fat. That broth had enough fat in it that you only need the broth and self rising flour. They were the best fluffy dumplings you ever tasted ☺💓

I seldom will do anything different than my normal because one time an acquaintance suggested I add cream of chicken soup to them, and I did, I absolutely hated them. In fact I don’t really like anything that uses canned soup. It’s been years since I bought any, although as a kid I could have lived on chicken noodle soup and canned cream corn. I also would pass on any canned biscuit dumplings.
I'm so glad that I finally found someone who make dumplings like my mom and her family. I can't remember if they used regular flour or self rising. I haven't made dumplings in years. I'm guessing since it's hard to find a fat hen, maybe some butter should be added to the broth? I'm from southern Illinois but most of my family came from Kentucky and Tennessee.
Kathie says…That would be me! I am 74 years old and I still make my great grandma’s recipe for Chicken-‘n-dumplins! One fatty, Whole Fryer boiled with just salt and pepper until the meat falls off the bone. That makes the best broth…no vegetables! To regular flour, add about 1 cup of the cooled chicken broth with that good yellow fat! (and salt to taste.) Pick all of the meat off of the bones and fat and set aside. In a medium-large bowl, start with about a cup of flour. Make a well in the center and pour in the chicken broth. With a fork, whisk the flour and broth…it will be liquidy. Combine really good, then gradually add flour enough to knead the dough until it is soft, smooth, and easy to roll out. Dust the table really well with flour then cut the dough into 3 pieces. Cover 2 of them with a towel, and on the well floured surface, roll out the dumplins’ thin enough that you can see through them. (Make sure that they aren’t sticking to the table as you roll them out). Grandma cut the dumplins with a very sharp knife (I use a pizza cutter). Push the dumplins aside and do the same thing with the rest of the dough. Dust the dumplins with flour. With the chicken removed from the broth (with enough salt and pepper added to your taste) bring the broth to a boil and in the center of the rolling boil, quickly drop in the dumplins. With a wooden spoon, if needed, gently move the dumplins to the edge of the pot. Work fast and add all of the dumplins to the broth, give them a gentle stir and cook them until they don’t taste like raw dough. Add the chicken back to the broth with the dumplins and cook a little longer. Taste ‘em…you’ll know when they are right! These dumplins are about 2-2 1/2” square, and they will slide down your throat! Soooo Good!! You can add a little Baked Chicken Soup base but No Soup!! Grandma Deakins was not only a midwife in the coal mining camp that their family lived in, but she made these Chicken-n-Dumplins for A LOT of people, including their family. Hard times back then and they had no Chicken Soup base or canned soup to add to her dumplins,….but let me tell you…they…are…delicious!! I was raised on ‘em, my kids were raised on ‘em, and now my granddaughters make ‘em! There isn’t a time that I make these that I don’t think of my Great Grandma Deakins, in Jackson Hill #4 Coal Mining Camp, Shelburn, Indiana. ❤️👩🏻🦳 Rest her soul…she would be so proud to read this!!!
My belated mother made the best homemade dumplings, she also made the flour tortillas it in way back best guess 55 yes back. She new how to season well they where yummy for a quick dumpling with the mess.❤😂
One thing I started doing is adding cream of mushroom and a can of cream chicken into it. The reason is my girlfriend made a shredding sandwich mixture for sandwiches and she did the chicken like u did or use a rotisserie chicken then 1 to 2 boxes of stove top stuffing into ur broth and chicken then one can each of the cream soups and omg this was the easiest way to make shredded chicken. sandwiches. And I seen a lady use heavy whipping cream in place of water, milk, or broth.

Hello, My mom used the hot chicken broth instead of milk in her flour. She would stir them together until it cooled enough to knead then she wrapped in plastic wrap and placed in the fridge, before rolling out and cutting in bite size squares. She made hers very close to yours other than the dough. Maybe that is because we live about 20 miles from Cedartown. Enjoyed your recipe.

*Looks really good!* You asked how our Mom made dumplings. My Mom, Chloie, boiled the chicken, adding salt & pepper. When done she took out the chicken, cooled it and took the chicken off of the bone. For dumplings,she always used "all purpose flour" and milk or broth. This is the way I make my dumplings, too: "Like Momma did!" In a pinch, if I haven't had chicken, I would use cream of chicken soup & water to make dumplings! ❤

we make drop dumplings large ones. from flour. We use milk. Then we cut the dumplings open and put the chicken and gravy on it. Yum. We Cover the pot when we reduce the heat. The steam cooks the tops. the insides are dry and the outsides are moist. we do not overwork the dough. I have had it both ways.
My goodness Tammy I remember eating chicken “stew” (we called it) that looked just like your chicken “dumplings”. Oh my the dumplings were So Delicious!!😋. This recipe was one of my Mother’s best. We always got excited when she cooked this meal. I haven’t sat down to this meal in a very long time! Thanks for sharing, now I know why my dumplings were falling apart. I didn't have enough flour and I didn't work the dough enough. I will never use tortillas shells for dumplings.
Chicken and dumplings are my favorite food. My momma made hers like u do. I add 1can evaporated milk, 1can cream of celery soup, 1can cream of mushroom soup to my broth. I don't like the tortillas for dumplings. I live in South central Oklahoma about 2 miles from Okla/Texas border.

Mom mixed them up then rolled ‘em out, like her biscuits, dropped in the pot, made sure they were all under the broth surface, and let them cook without stirring till done. I miss momma’s cooking♥️ She did use the canned biscuits after she got a bit older. Were good but not like the ‘real’ dumplins’.

I live in South Carolina but grew up in middle Illinois. Yes we made and I make homemade noodles and cut them on the kitchen table. She learned from my grandma who lived a lot in eastern Texas we use milk too!

You asked how our Mom made dumplings.
My Mom, Chloie, boiled the chicken, adding salt & pepper. When done she took out the chicken, cooled it and took the chicken off of the bone.
For dumplings,she always used "all purpose flour" and milk or broth. This is the way I make my dumplings, too: "Like Momma did!" In a pinch, if I haven't had chicken, I would use cream of chicken soup & water to make dumplings! ❤
You're a great teacher. I have always cooked and baked from scratch , like my great mamaw , mamaw & mommy did. People think it's a big deal but it really isn't
That’s the way I had to cook ( from scratch ) I didn’t have money to buy can soups had to do it on my own and glad I did .

Hi guys ,I'm from Loogootee Indiana and my mom always used canned biscuits when she made hers and I always loved them since I probably had never had them any other way and I'm pretty sure she still makes them that way today.love ya guys have a wonderful sunday!!
My mother and I both made dumplings like those rolled out BUT they are much much thinner than those and not at all chewy. Mama used cold water.
My daddy made the best rolled dumplings and drop biscuits along with cherry rhubarb pie
Sunday dinner twice a month we ate the most wonderful chicken and dumplings and nearly every Sunday morning was biscuits and milk gravy fried eggs and bacon or sausage. Thank you for bringing me some very nice memories with your cookin'.

my mom did not know how to cook. she just boiled everything. my dad cooked til he went blind with glaucoma. I do remember my dad took a Navy beans and cornbread a lot because there are six kids and a mom and dad.

we make drop dumplings large ones. from flour. We use milk. Then we cut the dumplings open and put the chicken and gravy on it. Yum. We Cover the pot when we reduce the heat. The steam cooks the tops. the insides are dry and the outsides are moist. we do not overwork the dough. I have had it both ways.
I was taught by my Mom and Granny. Bisquick never came in our homes. I do it just like yours.
My mom use ready flour and crisco water instead of milk and I hey we’re so good. Mine never turned out right so l will try with milk.

Oh my the dumplings were So Delicious!!😋. This recipe was one of my Mother’s best. We always got excited when she cooked this meal. I haven’t sat down to this meal in a very long time! I will never use tortillas shells for dumplings.
Chicken and dumplings are my favorite food. My momma made hers like u do. I add 1can evaporated milk, 1can cream of celery soup, 1can cream of mushroom soup to my broth. I don't like the tortillas for dumplings. I live in South central Oklahoma about 2 miles from Okla/Texas border.

I use the same biscuit mix, but I’ve only found it in a Walmart 50 miles away. My local Walmart does not carry the Southern Biscuit Formula L mix.

Mom mixed them up then rolled ‘em out, like her biscuits, dropped in the pot, made sure they were all under the broth surface, and let them cook without stirring till done. I miss momma’s cooking♥️
She did use the canned biscuits after she got a bit older. Were good but not like the ‘real’ dumplins’.

On the flower tortillas, you just can't cut him real small and like that you need to cut them in longer strips, that will make him a little better.😊
