one question: when I bake my sourdough (70% hydration) in a dutch oven (250C for 20mins lid on, after that 20-30min lid off (220C). My sourdough is very soft and delicious after cooling down. But after a day the bread doesn´t taste as fresh. But yours is way better. Whats the difference? Is there a heat difference in the oven?
I been eating dinner roll milk-cream bread with melted chocolate sea salt truffles wondering if that’s the same. Probably not as much flaky buttery taste..

did you know that you can eat molded bread? it may be gross to some but it helps the immune system.
