    Granite mortar VS. Clay Mortar - Thai cooking Knowledge
    Hi guys and welcome to Pana Napa Kitchen
    In this video I will explain about different kinds and usage of Thai mortar and pestle.
    In Thai cuisine, we use two types of mortar. The granite and the clay.
    The granite mortar comes with a granite pestle, where is the clay mortar comes with a wooden pestle.
    Now, I will explain how to use each kinds of mortar
    Granite mortar is used mainly for making curry paste, spicy sauce and to pound hard ingredient into powder.
    Basically, the purpose of this mortar is to grind ingredient into a fine paste. The ingredient can be hard or soft.
    This is why Thai craftsman uses granite as a material to craft this mortar. If you are using marble or clay, it might break easily.
    The shape of granite mortar also designs to suit its purposes. The round shape allows ingredients inside to move around evenly while you are pounding.
    How to use granite mortar.
    Simply grab a pestle on your preferred hand and grab the mortar on the other hand. Pound the ingredient in your own rhythm with the weight of the mortar, don’t contract your forearm because you will feel fatigue very easily.
    When you are done using the mortar, simply clean with liquid detergent and dry it upside down, but don’t let it completely close, or it will spell and moldy.
    What not to do.
    Don’t leave any acidic ingredients inside the mortar for a long time. Acid will eat up the granite, causing it to be porous and therefore shorten the life time of your mortar.
    Now, let’s talk about clay mortar.
    Clay mortar is mainly use for making papaya salad, and other kinds of salads. The cuisine came from the North Eastern part of Thailand.
    The purposes of this mortar are different from the Granite kind. It’s design to mash vegetables lightly, just enough to bruise it, to let the juice come out of the vegetables.
    This is why the material of this mortar is clay and wood. It’s light weight, and it has less power.
    Let’s take a look at the design. The shape of this mortar is like a funnel. It’s tall and narrow. This shape will allow the vegetable to say in place, when you pound, and also, it will prevent the salad dressing from plashing to your face while pounding.
    To use this mortar, grab the wooden pestle on your preferred hand, on the other hand, use a spatula to help moving the ingredients around to allow everything to mix evenly.
    After you are done, clean and dry your mortar thoroughly to prevent mold growing inside. Once again, dry your mortar on a rack or in a position that will allow the air to ventilate under to mortar.
    Which mortar should you have in your kitchen for Thai cooking?
    I want to show you quickly what mortar I have in my Thai Kitchen.
    I have 1 large granite mortar for heavy duty cooking, such as making chili dipping sauce or curry paste. The second one I have here is my little tiny mortar. This one is very convenient to use to pound garlic and chili, for quick stir-fries.
    Lastly, I have a clay mortar for making Papaya salad.

    Thanks for the informative video!
    If im attempting to make a clay mortar in my ceramics class, do you know if I should glaze the mortar? Its been said that without glazing, ceramic products are not food safe, but it doesnt look like that mortar is glazed.

      Hello Amahlia,
      The Thai clay mortar usually not glazed. I think it might be be slippery if apply glazing. But you can try maybe it works also 😊

      I think the reason it's not food safe is because it can't be washed. Did you try making one yet? :)

    The clay mortar do I use soap to wash?? Also do I have to do anything special for its first use? I just bought one from store and it’s pretty dirty and not sure how to clean it.

      I bought these locally so I'm not sure if you can find the exact same one online. I recommended this shop instagram.com/krokcraft/ for online mortar. The design is slightly different but the quality is good.
