How to make: Octopus in coconut soup - คั่ววาย (Koh Phangan Local Dish)

Phangan local dish
Kua Why is one of Koh Phagan local dishes. I learned this recipe from the local people here. Why is it a kind of string octopus. This kind of octopus is available seasonally, however, the locals have a way to preserve it by drying them in the sun. When they need to use it, they will just soak the octopus in water and it will become soft and edible again.
Ingredient
300g cooked string octopus (Why)
300g coconut milk
2 stalks lemongrass
5 heads shallot
1 ½ - 2 tbsp Thai shrimp paste
Instruction
Bruise the lemongrass with a pestle and slice diagonally into 2 pieces.
Bruise the shallot roughly and set aside.
Chop octopus into 1 cm long and set aside.

    Thank you for the very detailed video. I’ll be making Tom Yum Soup soon and had no idea about any of these storing methods. I’ll make sure to use these tips. Quick Tip: I would recommend using a straw to suck all the air out of the freezer bag. Simply close the freezer bag but leave a small opening on the end. Stick the straw in the small opening and close as much as possible. Suck and pull straw out quickly. Close the bag and bam.

    I grew a plant and after 4 year without digging out, it spreaded to a large area. The root is so hard to cut. I guess the part i tried is too old, need to pick the younger portion. I dug out yesterday, a lot of pink tender spouts. Do you eat that? I was almost throw them away.

    Did i miss country of origin? I get all my organic giner root from Chile or Peru. I wouldn't trust any ginger from China as it was a state secret not so long ago, that their farming land, now surrounded by industry, has some of the most polluted growing areas in the world. Where are your two products from please?

    I bought some galangal a few months ago n was hoping that it was like Thai basil, extra strong. But the flavor n aroma r mild. I don't peel the skin off either one. I soak them in vinegar water, scrub with a brush, n dehydrate. Thanks for the video. 🙏😘

    Hi I am hoping maybe you can help me. I used to order the most delicious noodles in a restaurant that closed because of covid. It sounded like kwaitow kimoa or maybe Kwai tao kemoa?
