Turmeric Chicken Soup Recipe - ไก่ต้มขมิ้น

  • Turmeric chicken soup is my comfort food. What makes the soup feels like home are the turmeric aroma, chewy texture of house chicken and lightness of the soup texture. I can keep eating the soup until the whole pot is finished!
    Ingredients
    1 small organic chicken
    1-2 turmeric
    5 stalk lemongrass
    8 cloves garlic
    2 tbsp salt
    1.5L water
    Instrutions
    Bruise lemongrass, garlic and turmeric and set aside.
    Slice lemongrass into 1 inch long pieces and set aside.
    In a pot, add water and set over high heat. Add lemongrass, garlic and turmeric directly into the water. When the water starts to boil, and aroma from the herbs start to come out, you can add the chicken. Close the lid and wait until the chicken is cooked.
    Once the chicken is cooked, season the soup with salt and continue to boil the chicken until it’s soft and tender.
    Turn off the heat and serve hot with steamed jasmine rice.
    Note*
    In Thailand, we eat every part of a chicken so when we make chicken soup we also add everything. The bones can make the soup taste sweeter and bring out umami flavor.
    If you are using free range chickens, it can take more time to cook because their meat are more lean and less fat when compared to farmed chicken, therefore, it takes longer time to become tender.
