Hey Angie- love your farm. Have you considered shade cloth to reduce temp in the greenhouse? You could look at 20% light blocking shade cloth.
Also do you have roof vents that can let hot air rise and escape?
Lastly, perhaps farm cats to deal with the rats.
Do you add Mycorrhizae fungi to your soil?, if not could help with nitrogen.
