Looks so tasty, taters instead of tortilla chips is an awesome substitution.

I would have snacked on a few of them tatter bites before adding anything to them! I like this cook, many variations you could make to go on them tatter bites. Good job Jeff, I am gonna have to make this one! Next level for sure!

I would add that potatoe that was scooped out to it. I'd add butter then the filling.
I'd use golden potatoes like Yukon or kondriak. And I'm a sour cream guy so I'd add more sour cream.
I'm not a salsa guy that much but many other people are. I can handle a few jalapenos but for me I can do without the spicy, but I understand that others like it. I love jalapenos on pizza with pineapple and ham and I get jalapeno cheese bread at subway.
On this I would also add a bit of bbq sauce.

That looks amazing. Perfect dish for football!! You got me thinking about trying the same thing with crispy tater tots instead of the potato skins. Either way thanks for the ideas and the videos Jeff!

All is well. Jeff I think you just took nachos to the next level. The sauce master strikes again. I'm going to the store right now and this is happening tonight. It's the most complicated, drawn out, labor intensive, recipe for nachos I've ever seen. Jeff you're a genius....= )
      Thanks for sharing. = )

Jeff. I think this is my new favorite nacho recipe ever. The only thing I could think of that I would change would be that instead of putting the potato skins back on the pit.... dipping in a wash of 50/50 cornstarch and water. Then fry them up nice and crispy. That way they won't go soft. I know that's adding some more work to an already complex process, but I think I'm going to have to try that. Thanks Jeff.= )
....and possibly making the guacamole from scratch. I like it chunky not mashed. Actually you've already got all of the spices you need. Just chuck up a couple of of avocados and that will work. = )

This should just be a twice backed potato recipe . It would cut your cook time in half if you don't do this nacho part. If you really think about it the nacho part is almost pointless.
Edit: I think you can buy potato skins without anything on them at GFS.
