1 lb Lump Crab
1 bell pepper
2 jalapenos
1 onion
1 lb monterey jack cheese
1 cup parmesan cheese
AP & Lemon Bae Seasoning and Sea Salt
1 pack corn tortillas
2 tbsps butter
1 tbsp garlic paste
cajun seasoning and chile powder
1/2 cup dry white wine
1 1/2 pints heavy cream
1 tsp lemon juice
oil for frying

Totally agree with frying your own chips. So much better than what you buy in the store and they hold the toppings much better and stay crispy longer

Even better, I had enough cheese sauce left over to freeze. I froze a couple of portions, took it out recently to defrost in the fridge overnight. Reheated it slow and low with a little cream stirring frequently. Prepare your shrimp and tortillas fresh and put it altogether like normal and it almost just as good as when I made the sauce fresh. This is a winner!

love, this I made this. Myself but I did not have the crab meat. I had shrimp cheese nachos, and melted cheese. So now I have to do this with the shrimp and crab meat. We need a little bit of lobster meat

I would agree about cheese and seafood if you are using delicate mild fish. Shellfish is different and the seasonings you used deepen the shrimp flavor. Plus you left the crab pure. That will prevent the crab from getting lost in the cheese. Beautiful dish.

I used to go to a restaurant for their seafood enchiladas I was so dissapointed when they drropped them from the menu. Now I can make them at home.
