All Nigerian Recipes It's like when I have to explain to my friends how to make South Indian food. I do things that my mother did, and generally do without thinking. Then, I show someone else how to do it, but forget to explain that I'm doing something specific. They didn't realise that I did it. Then disaster. For example, there's a step in a lot of South Indian recipes that involves heating up hot fat in a pot, over highest heat. You then add whole spices (mustard seed, cumin seed, etc), and get them hot enough to "pop", so that they infuse the fat. While they're popping, you lift the pot off the heat for a moment, so that the oil doesn't overheat, and the spices don't burn. It took my friend watching me like a hawk before I realised that I do that lifting off the pot from the stove thing without thinking it's anything special, because it's so obvious to me. Others don't think it's so obvious!
This was long overdue! I searched everywhere for this recipe last month and didn't find any. So I finally just figured things out myself. So this is the first. Well done chef! 😃
Thanks again. I used this method (of cutting the cassava) and it worked. Before I tried cutting it into 2 halves and it went bad. ...Only that Spanish yuca doesn't have starch like our Nigerian cassava.

Awww! Tell me about it. Wet, wet Holland. :) You can spread it in your kitchen overnight and use a table fan (set to low) to dry it. It works too if the room is not too damp.

Can oven be used, no sun here. There is also a huge one called Akpu Mmiri but it can also be prepared with Abacha ingredients. Can you make a video on that too?

Dear sister Flo, I need your rescue ASAP. I ONLY discovered this making abacha from scratch video after soaking cassava for two hours then grated them into abacha. What next? I missed the parboiling step; now I have fresh abacha and clueless what to do with them. They cannot go to waste at ALL nooooooooo. I am going ahead to follow step two by soaking them overnight and wash them thoroughly according to the steps in your video. Question? Can I steam them after thorough wash then put them to dry in my oven at lowest setting until dry? Sunlight has diminished in the region where I live therefore I use my oven alot to hydrate many produce etc. I'm troubleshooting here, any suggestions from you OR any of your subscribers. No. After grating you need to soak the abacha for at least 8 hours (I go with 12 hours) for you to be able to wash off the cyanide easily. Even if you soak it early in the morning by the time 8 hours is gone, the sun will be gone too.

I mentioned in the video that washing it gets rid of the cyanide. Just make sure you wash it till it is no longer slimy and the sweet and sour taste is gone.

Even wind can dry this really. So spread it in your kitchen and set the fan on it, it will dry.

Can you skip the 2 day drying process, if you want to use it right away to make a African salad ?
Yes you can but there's a difference between preparing it wet and when it is dried first then soaked before use. The wet one is not as satisfying.
