Another great recipe of yours saved to use in my instantpot! (Have lost count). Have done similar combo on stove with cast iron but this looks even better. The non stick bowl for my rice cooker fits in my instantpot nicely (as cake pan substitute) so I am all set for Christmas...after testing of course:)

Could you make this with cauliflower rice instead of potatoes?
I have not tried that. I would think you may want to saute the rice first to help remove excess moisture
