    Ingredients
    2 large potato’s
    1/2 tsp Onion powder
    Salt & pepper
    1/2 tsp Garlic powder
    2 tbsp All purpose flour
    1/4 cup Grated cheddar cheese
    Method
Grate potato’s using a box grater. Slip potato’s into a bowl of cold water and mix to get rid of starch. Place potato’s into a bowl lined with a cloth to dry. Add oil to a pan on medium high heat and fry for 4-5 mins. Let potato’s cool and add spices. Then add all purpose flour and cheddar cheese; mix until combined.
Preheat some oil over medium high heat. Mould your mixture into a hash brown shape and place into preheated frying pan. Flip over once golden brown. Once they are golden brown from both sides, remove from heat and place on a paper towel to soak up excess oil. All done!

Thank you for this simple and easy to follow video! Made this right away.
Instead of using powders like in the video, since we had the ingredients available I cooked them fresh. I fried the grated potatoes with minced onions and garlic (if someone wanted to try and were wondering the order they went in the pan: garlic, onions then potatoes). Let it cool, salt and pepper to taste, flour and cheese to bind (just like in the video) and viola!
Turned out a great and crispy meal :) I got to bond and make it with my 5y/o too who was craving for hash browns. Can't thank you enough!

You don't need to get rid of the starch, just the excess water. So don't put them in water and add more of what you're trying to get rid of + don't soak out the starch and then use more cornflour or potato starch to replace what you just threw down the sink! Besides, you're just adding to the workload and more dishes to wash. Squeeze the freshly grated potato in a teatowel, coat all very, VERY lightly with vegetable oil, season/ spice if you want, and microwave for 1 minute. Check if the potato grates 'just' adhere to each other. If not, zap again in not more than 20 second bursts until they do. Even 2kg of spuds pre-grating, will only need zapping for 1-2 minutes total. Spread them out in your dish, allow to cool to room temp, then mix in the small amount of starch as above, even 1 kg needs only around 5-7 grams. Form them and deep fry straight away, no need to fridge or freeze. Why?...cos they have enough starch! Bon zapetite!! 😅
PS: Using potato starch powder instead of cornflour (Yanks say cornstarch), will give a lot more crunch. Beware though, if you go overboard, you'll get all crunch and no delicious, fluffy potato inside. 🥳
PPS: Deepfry at 180c in fresh vegetable oil or vege oil that has only cooked potatoes. Olive oil is too strong in flavor, use cheap vegetable oil. (Which is in fact seed oil and not good for us, in the early 20th century it was created as cheap and plentiful oil to use in machinery!)

Tip: If you want to grate fast and avoid grating your fingers then simply get a hand towel or food-safe cloth and grasp the thing you want to grate using the towel or cloth. Also if you rinse the grater in boiling water it seems to grate much faster and easier.

I think the temperature of the pan & oil is key. A lot of people try and heat the pan too fast by cranking it up to max and then having to adjust later. It's better to start with the right heat, and be patient. Give the pan enough time to get there on its own.

Did you try to skip the step where you clean the potato and get the starch out ? Only trouble i had with this recipe is when i did this as i was in a hurry and it turned out really sticky and hard to make into a patty. Also there's a few cooking tools you can buy that are really cheap and help a lot into making this, like the vegetable chopper, i just put the potato inside and it turns it into finely cut pieces, it's a lot better than gratting them and it saves a lot of time too (plus there's no chance for you to actually harm yourself like i used to with the box gratter).

This is the best recipe so far! The same recipe as my mum made for her ‘potato pancakes’ - these she made for our tea in the 60s/70s (money was tight) we absolutely loved them and to us they were a treat. Mum wouldn’t have put cheese in, or garlic - as kids we’d probably never seen a clove of garlic- she may have added it nowadays! Thank you. I’m just looking for the recipe.

I am glad to see that I was able to figure out on my own that the grated potatoes MUST have the starch and water removed from them. I prefer to lay the hash browns flat on a cutting board, then gently run cold water over them and mash them down with my hand to get rid of the starch and water. I add onion powder, but no garlic. I prefer my hash browns flatter and thinner, so they always end up nice and crispy. And yes, I do at times add cheddar cheese. But I may try this method as well.

There are quite a few egg replacers out there these days. They usually come in a box in the baking section of your average grocery store and cost about $4-$6, and can be used to replace about 50 eggs.
