Homemade Gnocchi

5 regular sized Russet potatoes (33.65 ounces/955g)
2 1/2 cups (300g) all purpose flour
1/2 teaspoon salt
Pesto
1/4 cup (60ml) olive oil
3/4 ounces (20g) fresh basil
1 to 3 garlic cloves (this will depending on how large they are)
1.5 ounces (42g) vegan parmesan
1/2 cup (60g) walnuts or pine nuts
1/2 teaspoon salt
2 1/2 tablespoons (37ml) water
Vegan Ravioli

Ravioli Dough
2 ½ cups (300g) all purpose flour
¼ teaspoon turmeric
¼ teaspoon salt
½ tablespoon (7ml) olive oil
½ cup + 1 tablespoon (135ml) warm water
Filling
1/2 block super firm or extra firm tofu (about 8 ounces/227g)
1/2 cup (85g) frozen peas, thawed
1 lemon (about 4 ounces/110g)
1/2 ounce (14g) vegan parmesan
1/2 teaspoon salt
1/3 cup (80ml) non-dairy milk, unsweetened and unflavored
Others
1 teaspoon olive oil
1/4 cup (42g) frozen peas
1/2 lemon, juiced and zest
Flaky sea salt, for garnish
Semolina Flour Pasta

1/3 cup (80ml) warm water
1 tablespoon (15ml) olive oil
1/2 teaspoon salt
Gluten Free Flour Pasta

1 cup (120g) gluten free 1:1 flour
1/4 cup (60ml) water
1 tablespoon (15ml) olive oil
1/4 teaspoon turmeric
1/2 teaspoon salt
Sauce
6 ounces (170g) grape tomatoes
3.5 ounces (100g) carrots, chopped
2 cloves garlic (15g), sliced
1 1/2 tablespoons (22ml) olive oil
1.4 teaspoon salt
1/4 cup (60ml) water, or to thickness preference

Thank you so much! Ah really where are you? I was just in Rome Naples and Lake Como and had a pretty easy time but I know the smaller towns it will be more difficult

I never liked making my own pasta when still a vegetarian, to the point where I gladly got rid of my pasta machine. But it's hard to find good vegan pasta that isn't plain noodles, and these recipes are so interesting, that I'm motivated to give it a try! Thanks for posting 🙂
Thank you so much! Yes dry pasta is always vegan but the fresh pasta isn’t so definitely is almost impossible aside from kite hill to find anything fresh. I hope you give one a try soon 💕
