A little late to the 'tiny' party here, this was to show off that this plane goes above the atmosphere into space to quickly go to different locations all around the world within a couple hours or less.
For those less educated, the effect on her hair is microgravity which occurs when an aircraft lowers altitude at an increased rate, cancelling out the effects of gravity, simulating weightlessness or in other words, causing you (Or your hair) to float. Yes, astronauts in training often perform this in a plane to prepare them for space.

See he doesn't get it and because he doesn't get it then there would be no celebration if it were left up to me....but Pepper calmly deals with his MADNESS...Now lets talk about the seat belts...Tony ask about the seat belts and Pepper calmly answers because we have to put them on... The Tony Starks that I knew more then likely would still be wrapped up in the conversation about his friendship and NOT PUT HIS SEAT BELT ON....which he would have floated out of his seat then the audience would have understood why that happened...COOL PLANE BY THE WAY!!!... :D JUST MY HONEST OPINION!!!
