1 lb lean ground beef
2 cups Minute rice
1 Tbsp tomato chicken bouillon powder
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground cumin
1 3/4 cup water
1 1/2 cups of your favorite enchilada sauce
6 to 8 oz mild cheddar cheese
salt & pepper to taste

Thank you! I rent a room and sometimes the shared kitchen is being used or there may be pots/pans in the sink from my housemate so this is definitely a go-to dinner or weekend prep for a busy work week! Mmm easy & looks delish!
This is exactly why I used an electric skillet and Minute rice.😄 I know of 2 people that live in a shared kitchen space or a space with no kitchen. This is just a quick, easy, hot meal to put together when you don't have a stove or kitchen. 😊
I tried the lazy slow cooked chicken legs and mashed potatoes. I had to go to Plan B and use the oven at 250 degrees F for almost 3 hours in a large pyrex baking dish because the crockpot I have wasn't working. But the seasoning on the chicken (I omitted the the Montreal Chicken Seasoning because I didn't have it) made it oh so good. The guests that came over on Friday absolutely loved it and I can't wait to make this again in the future.

I made your green salsa verde chicken/rice casserole yesterday. It is wonderful. The only thing I would have changed is NOT using TILAMOOK mozzarella cheese. It is way too chunky (large shreds) and didn't melt well enough. My bad... That cottage cream cheese hack is going into heavy rotation. I can use it SO many ways. Thank you, for YOU!

If using regular rice, just cook the rice first before adding it into the recipe.

Love this! This is how I have to cook. I am renting a small house in Mexico. We only have a plug in two burner stove top and a small toaster oven. You gotta work with what you have, right?!? Anyways, this looks delicious and came together nicely. I think I would fry up some corn tortillas on the side for scooping it up.

I just used that HEB enchilada sauce, it was spicy, but good. I added a can of mild enchilada sauce to make a double batch of enchilada casserole. Can't wait to try your recipe!

Oh, BTW, when you said the HEB red chile sauce was spicy, I thought, that it definitely looked kind of hot/spicy . . . my experience has been that the brighter orange a chile Colorado sauce is, the hotter it is, and the darker/redder is milder.

Looks delectable, Simply Mama! Wondering, though, I have tons of uncooked white rice but not Minute Rice. Should I cook the equivalent of 2 cups cooked rice instead and delete the water part? I just recently bought some enchilada sauce and I'm anxious to try it! Thanks for this simple recipe.

What a great dish to make in the summer when even the thought of turning on my gas stove makes me sweat.
Had hesitations about this recipe bc I’ve never used instant rice before and always make my enchilada sauce from scratch. But ya girl is 35w pregnant and needs all the help 😅 my husband and stepson didn’t even know! They grabbed seconds and almost thirds had I not mentioned dessert! Super yummy!

What about replacing the beef with chicken, and the water with chicken broth? Chicken enchiladas!!! 🤤 Cucumber salad as a side. I need to go to the store now.
I made something similar to this but I put the cheese in towards the very end after that I fried corn tortillas and put those on top covered it with the lid and it came out delicious
