See, I’ve analyzed the form of this rondo and I get something more detailed than yours, specifically this: A minor section - A Parallel thirds in C major - B A major theme - C F# Minor section - D Scales in A major - E Leading to this for the whole piece |: A :||: B A :||: C :||: D :||: E D :||: C :||: A :||: B A :||: C :| Coda As you can see, mine has the A major octaves as the main theme, even though it doesn’t come first and ternary form episodes, leading to the reverse of the typical rondo. Typical rondo is Main theme, Episode until the final statement of the main theme. Here, you have an Episode first rondo.
Of course that is a more detailed structure that is correct. I went for a more simplified version here in order to bring out what I feel most important. That's the beauty of analayses, you can do them differently. The reason is I think that A and B is too close to be called separate sections. In this case I would call them |: A1 :||: A2 A1' :|. The same with D and E.

Hi Hello It’s in A major because that’s the key of the sonata and the key that the movement ends in. In fact, this sonata is one of those few that has all the movements in the same key. Another example is Beethoven’s Sonata in Eb "The Hunt". Even though it technically has an Ab major middle movement, it still feels like the whole movement is in Eb major, thus me bringing it up as an example.
Carrots is right, it's the shole sonata that is "in A major". It's hard to decide what to call this movement because it goes between A minor and A major so much. Gun to my head I would go with A minor though, since it's not uncommon for movements in minor to end in major.

Shostakovich for example does this in his fifth symphony final movement. Beethoven does this often only to thwart the nice, calm major with the presence of a diminished seventh chord that brings us back to minor Here in this Mozart movement, to me, the A minor seems more like an episode than anything else and the majority of the piece relates back to the A major, so I would consider this movement to be in A major like the other 2 sonata movements(which also involve that same back and forth between A major and A minor).

Unfortunately no, I haven't done the Appassionata as of now. I have played it though, so maybe in the future. The 2nd movement is a lovely set of variations over the simple chorale that starts it.
