When I had my 43', I would always remind myself, "It's like steering a grocery cart. You want to rotate to port (left)? Pull back on the port side trans (that engine is now in reverse gear) and push forward on the starboard side trans (now in forward) and just go slow and bump it between neutral and in-gear. No steering wheel needed (with inboards especially).
Rapid deceleration, if not complete stop due to the drag. The motors have a "leg" that extends below the surface that the propeller is attached to the rear of, so hitting a tree will hit the "leg" rather than the propeller first, probably damage the hydraulic system too
