    Nicely done. The eggs, the way he handled the eggs. Not sure if I ever could do that! I will have to break them the usual way. Sometimes, I seen Chefs put a big bowl over the vegetables for a couple of minutes - to steam em. Also impressed with the grill or Hibachi cleaning technique. Basic cooking it is - not too fancy. Just enough technique to show skill and dedication. Protein, vegetable, carbo..

    I love how you teach the new guy to always be clean. A lot of teppan chefs only focus on fast cooking and show but I like how u teach cleanliness is number one. And also the food has taste like what it is. Vegetables must taste like vegetables etc. you are a good chef and you sound just like my teachers that taught me hibachi

      "Yum Yum Sauce is made of mayonnaise, ketchup, vinegar, garlic, sugar, paprika and water to thin the sauce out. That's it!" - I think I will try to make this..

      Spam is a Hawaiian classic. It goes great with white rice. Be sure to grill it on high heat to get a nice crust on the outside. Spam, Sunnyside up eggs and rice is a great combination.

    Sounds like a Beethoven piano concerto but with a jazz/tango cadenza! Keith Jarrett? Fantastic. Who knows about the cross contamination. Probably not raised in an American factory farm. Animal husbandry has a large impact on bacterial load. I'm a chef and I would eat it. I thought the chef showed excellent skills. If you want Hollywood; go to the movies.
    Update on the music. Its actually late Mozart; K466 in d minor. The pianist is Peter Breiner. I’m definitely going to listen to more of him.

      Use cold, day old rice. As per cooking times, it depends on what type of rice you use.

      Ive heard most restaraunts will use a blend of 2 to 1. 2 parts Jasmine to one part short grained rice.

    That is exactly the portion of rice I get at the chop chop.
    BTW, I liked the music, I don't speak Japanese so it fit just fine in the vid.

    This would have been a great video if someone would have said what he was doing step by step. Should have been more instructional so people can follow.

      Vodka on grill for flame and cleaning. Vegetable oil (can substitute olive oil for the initial roast on the grill due to high flash point.). More Vegetable oil on eggs and fried rice during frying. Salt and Pepper on both them and the veggies. Yum Yum sauce in the middle portion of the rice as it was being piled and then flattened. Sesame oil on the fried rice near completion for flavor (lower flash point).

    Entré con la intención de ver un video de cocina japonesa pero me distrajo muchísimo la música y mas aún cuando llegada al minuto 10 aproximadamente, comienza una cadencia del piano a manera de bolero o balada con visos jazzísticos....en un concierto clásico de Mozart! muy interesante!!!! pero... no pude ver para nada el tema de cocina que me interesaba...jajajaj. En fin, gracias por el vídeo.

    Dos observaciones 1) cuando esté los pollos y la carne de almuerzo ya el arroz y los vegetales están fría 2) utilizar los mismo utensilios para los pollos y los vegetales existe la contaminación cruzada que es muy peligroso.

    Esto es un teppanyaki y al hacer un teppanyaki el que lo prepara tiene que hacer un show como el que hizo este señor, ese el atractivo de este plato o de cocinar en un teppan o plancha, no es sobreactuación co hacer de payaso esto hace parte de cocinar esta comida japonesa... me gustó mucho el dominio de la pala y el tenedor, muy bueno. y por supuesto debe haber estado super rico!... Gumawo!

    Great video! Thank you! I would love to see more. I found the music to be terribly distracting though. Sounds like the never-ending music heard at a funeral home visitation. IMO would be better with only the sounds of the cooking. Won't stop me from subbing though. Thanks again

      Listen to the sound of the grilling, at least 300-400 range and during the chicken after it’s cut at most 425-450. The oil is most likely canola oil.

      It really makes me laugh when people talk about hygiene. Once upon a time when I was in Seattle, in a very neat and tidy restaurant a man caught a cook spitting cough in someone's soup. You never know what you're eating. Here at least he is cooking in front of people. PS: Put your hygiene in your ass.

      Went from raw chicken on the spatula to the vegetables. Cross contamination! Always should wipe after placing chicken on the grill with utensils

      I can only tell you how we did it when I was a hibachi chef for 12 years. Fried rice, salt pepper seseme oil garlic butter seafood sauce soy sauce seseme seeds. Vegetables, salt pepper seseme oil garlic butter soy sauce (later we did soy sauce and teriyaki sauce) seseme seeds. Chicken, salt pepper seseme oil garlic butter lemon soy sauce teriyaki sauce seseme seeds. Reply if you want to know other menu items
