Chocolate Sponge Cake
Ingredients:
5 large egg whites (160 grams)
1 teaspoon white vinegar
120 grams fine Sugar/or caster Sugar
4 large egg yolks (72 grams)
90 grams plain flour
30 grams cacao powder
1/2 teaspoon salt
20 grams oil (20 ml)
30 grams milk (30 ml)
1 teaspoon vanilla essence
pan size 18 cm
Baking temperature and time:
150°C for 35 minutes, and then 170°C for 3 minutes.
Baking time may vary depending on the type and accuracy of you oven.
Don't need baking powder for this recipe !!!
i tried it last night. i cant believe i have made my first ever choco sponge cake. its even more yummy than other sponge cake i have ever tasted. i love chef michaels recipes. so soooo true.

You are such a role model for both male & female aspiring bakers because you are so neat & tidy. Cleanliness matters a lot when food is being prepared. I appreciate the fact that when Michael transfers the batter to the baking pan, it doesn't look like he left 1/2 of the batter in the bowl!

Yesterday night, I bake this cake following your instruction and recipe. Then I also made the frosting as you instructed in the Simple black Forest cake. It turned out so good. The cake was moist and soft. the frosting was so nice too. My son keep eating the leftover frosting in the bowl, he loves it. Thank you so much for the videos Michael. Much appreciated! i am going to bake this cake again next weekend for my party :-)

Hi Brother Michael.. I tried this lovely recipe. It turned out really yummy. When we watch closely how you do the batter there is a loot for a beginner like me to learn. I used a 20 cm round pan. As I only had that pan. So i increased all the ingredients to 1.25 times the original recipe. I kept to the same temperature and timing. Thank u so much for teaching us. May God bless u

Tried this recipe twice and everyone loved it. I personally like it to be a bit more sweeter. Is it ok if I just add some more sugar to the recipe without changing the quantity of other ingredients?

But ive been having a challenge with the chocolate cake!.. it never turns out right nor spongy!.. its hard and at the beginning it takes ages to get to soft peaks 🤦🏽♀️! What could i be doing wrong??.. the vanilla sponge cake is always a hit in my house. Thank you
Yes this chocolate sponge is a bit difficult to execute then the other sponge. Make sure not to over fold your cake batter. Try to learn and focus on your folding skill and you will do just fine.

Michael, many thanks for the time you take to explain your methods in such detail. May I ask how you prepare your pan? I see parchment paper lining the base but you use a knife to loosen the baked cake from the side, do you grease the sides or not? With sponges and chiffon this can be important I believe?
Do not grease the side of the pan using my sponge cake recipe. Just a parchment paper on the bottom will do. Good luck and success.

Insert skewer in the centre of the cake ..if its come out clean then u know its done
I think for sponge cake we shuld not use baking powder or soda..its softness is build by flufiness of egg..heard one chef saying that..pls clear..and also if we add oil or milk cake is becoming sticky type..michael sir i ddnt tried ur recipe..just want to clear my doubt..i am not an expert in baking..thanks in advance..
Hi, I just bake this cake following your recipe, but my cake didn't grow so high as yours. For the second time I had to use baking powder.
Please don't use baking powder in my sponge recipe. It will not work. I don't recall asking people to use baking powder in the video.
Michael, seems you are not adding the flour to the egg mixture before adding to the egg white. Won’t the many mixing of the egg whites caused the egg white to collapse (making it lose its stiffness)?
would this recipe still work if i used gluten free flour? (my mother has a gluten alergy)

Hello Mr Lim. I have following your recipes and the new butter, white and chocolate frosting which I add on my vanilla cupcakes thanks to your recipes. I have this question, I noticed you only add vinegar and not baking powder or baking soda. Is there a reason why or you just choose not to? Thanks for making it easy for us to learn from you.
Vinegar is to stabilised the meringue, just like cream of tartar. For light cakes, meringue is enough to make the cake rise. Adding baking powder will make the cake rise too much and deflate once is cooled. Add baking powder only for heavier or denser cakes. Baking powder is also used in chiffon cakes because it uses tube pan, and it won't work on round regular pan.

Your receipts are great and easy to follow. My question is how to alter the ingredients in different size baking pan? Like my pan is 9 inches(around 22cm). Thank you.
I double the ingredients for pan size 24cm. For pan size 22cm just add 75% more ingredients. That means you need to use 7 eggs. I think you are able and capable to do the calculation yourself.
