I’m using your recipe to make mini pavlova nests and I’ll be filling them with homemade lemon curd…I’m just wondering if I can fill the nests the day before serving them? Or will the meringue get soggy from the curd and sitting in the fridge? Thanks so much!
Yes, I have more instructions on my website: tatyanaseverydayfood.com/pavlova-recipe/ Prepare the recipe the same way but instead of making one large pavlova, transfer the meringue into a large pastry bag tipped with a star tip, such as Ateco #847. Next, pipe the meringue onto a baking sheet, forming 3 to 4-inch nest-like pavlovas, leaving a small well in the middle for the fillings. Bake the mini pavlovas for 1 hour at 200F, then cool completely.
I use blender for the regular sugar just a few seconds gives a finer granular sugar and no need to shop for castor sugar which is impossible to find here in Can.
HALP! I tried to make this, but it weaped sugar. Like I could have carefully picked up sugar shards from all of it. And it wasn't stable enough to move off of pan, I just ate some of it of the pan. I let it cool in oven w/o opening it for 3 hrs. Also it was SUPER sweet, like I have a major sweet tooth and even I thought it was too sweet, can I cut the sugar?
Hi! Sorry that it didn't turn out perfectly for you! The weeping sugar is actually sugar that didn't properly dissolve in the egg whites. Make sure to use super fine sugar (Castor sugar) and add it very slowly. You can also whisk the egg whites on low-medium speed for longer to ensure the sugar gets dissolved. I don't recommend reducing the sugar as that will affect the way the meringue turns out. The lemon curd really helps break up the sweetness! :)

I agree with you, normal sugar or even castor sugar is not suitable for making pavlova, the mixer will go on forever but still you can feel the grain of sugar in the mixture. What I normally do is to pulse the sugar in food processor...
Hi! Oh, no! The sweeping sugar or 'water' occurs when the sugar isn't fully dissolved in the egg whites. This should affect the test of the pavlova though! Next time, just keep mixing the egg whites and sugar for longer on lower speed until the meringue doesn't feel grainy any more.

Didn’t work. I left it in the oven overnight and they are too soft and did not get hard… god pavlova is so difficult to make. This is the third recipe I tried. FAIL
Hi! You didn't fail. It should be soft on inside. I think you might be confusing pavlova with meringue. Pavlova is supposed to be soft on the inside, only crispy on the outside. Meringue this size will not get hard on the inside. You will want to spread the meringue in a thin layer in order for it to become hard on the inside.
