    We make something similar to this here in India called "Chikki". Instead of almonds, we use peanuts. I love them but am afraid of all the nasty stuff that might be put in it. Now that you've shared the recipe, I can make my homemade version. Thanks for the recipe, Gemma :)

    I love this!! In Italy we have a lot of different "Praline Candies", made with different kinds of nuts and flavored in diferent ways! There is one made with almonds, flavored with lemon zest and served over lemon leaves...it's amazing! Thanks for this basic recipe, Gemma 💕

    I tried this and I can say this is the best praline recipe I have come across so far....I never knew roasted almonds taste so good ....it brings out such a good flavour in the praline... too good👌😁🤩😋must try

    awesome recipe...we make a similar thing in india using peanuts and jaggery...it is called gachak/chikki..

    Hi Gemma, I am also a lover of praline. Thank you for teaching us how to make this most delicious treat, especially now that the holiday season is upon us. I must confess I am a bit weary of anything with caramel as an ingredient. But your demonstration on how to make your own is so helpful. I want you to know that when I am successful in making it ( notice I said when 😊 that is all thanks to you ❤ ) I shall be the first in my family to make a caramel and not use those candy pieces that come in a big bag that you melt down and call caramel! I'm not trying to put them down, they never met Gemma Stafford!😊❤💚❤

    Pecan Praline is my favorite ice cream flavor. Maybe you can use this and make that flavor for your next ice cream video! I tried making pralines when I was about 13. It was a think gritty mess 😂😂 You dropped the candy like you would with cookie dough instead of in one sheet. I suppose at 30 it's time to give it another try! Thanks for sharing 💜

    In India, we call it Chikki. Traditionally peanuts are used to make it, but now people use different combinations of nuts to make different varieties and also sometimes jaggery is used instead of sugar for different taste.

    This is a popular street snack in Ghana called Nkate cake, nkate means groundnuts / peanuts, there is also one made from dried coconut as well

    Hello. Here in the Philippines, we make and call it peanut brittle because we use peanuts instead of almonds. In the Bicol region where our Miss Universe Catriona Gray was born, bicolanos use their native pili nuts to make delicious products similar to praline.

    In the Us. At hard crack, we call that "Brittle" not praline. To me, I've always seen pralines as stiff chewy caramel with nuts.

      Yes, too many passionate Southerners have told me that. But this is praline in Ireland and other parts of the world too.

    we call it chikki in our country ..and we have similar candy known as gajjak that is made out of jaggery and nuts instead of granulated sugar which more on the smoother side ...

    Hmmmm.... never tried them, I’ll probably try makin them this weekend😋😋 but I have a question... if we’re not supposed to mix the caramel when it’s cooking because it crystalizes, why won’t it crystalize after we put in the butter and almond and start stirring? Hopefully my grammar makes sense to you because my literature is not good...😅😅😅

      This looks and sounds like "brittle" we in the South use peanuts in. Ours is also thicker. Pralines are made with brown sugar, cream, and pecans and are usually dropped out on wax or parchment paper. Pralines are thick and much softer than brittle. Divinity is sugar, corn syrup, egg whites, and pecans, and it is usually dropped on wax or parchment paper. It can be poured in a pan and cut into squares. It's hard to make or store any of these candies when the humidity is high.

      So many impassioned Southerners have called me out on this. But yes, in Ireland, we call this "pralines". Other Bold Bakers from all over have chimed in on what they call this where they're from :) Interesting isn't it? Same thing, but a different name

      @@biggerbolderbaking, [Giggles] @ impassioned. Often, but not this time. Ha! :) It's hard to tell tone, attitude, and emphasis with writing, isn't it? No calling you out here; I was teaching for any who didn't know what we call pralines and brittle in the South.
      I thought it was interesting how many countries use peanuts for their candies. And learning the names is fun. BTW, I have some Irish in me, too. :) ♥️ you!

      Yeah I've never known pralines meant anything accept pecans in hard caramel and usually pralines isnt solid solid ... its crystalized kinda so its softer and it's usually not white sugar. And I'm from alabama and we say pray-leans lol

    We have something similar in Egypt, we call it "Moleed sweets" we eat it around this time of year when we celebrate prophet's day

    Yummy. I would call this almond brittle. Like Lisa Huther said, "Pralines are made with brown sugar, cream, and pecans and are usually dropped out on wax or parchment paper. Pralines are thick and much softer than brittle. " But whatever you call it, it is delicious. :D
    Update: I stand corrected, in the Southern United States pralines are as described above. It seems that what we call brittle is called praline in other places in the world. :)

      Hi, I'm from the south and to me this is more like peanut brittle. Pralines are soft. Regardless what you call it, it's all still yummy and a welcome treat during the holidays 😁

    This is called 'chikki' in India, but it has peanuts instead of almonds and it is made with melted jaggery instead of caramel and it tastes delicious!

    For something like a caramel would it be better to use castor sugar since it’ll dissolve easier? And do you have a tip or hack to make castor sugar out of regular granulated sugar?

      You can use caster sugar in making caramel. It’s not significantly better but it is an option. If you have a heavy duty blender, you can try processing granulated sugar into a fine powder. Don’t over mix or the blades can heat up because of the friction and you will have sugar that starts to melt. It’s still best to buy them in fine form already, as it would be more efficient. Hope this helps.

      Yes you can. For each cup of sugar, use 3/4 cup of honey. Do let me know how you get on!

      @Bigger Bolder Baking Hey I did the recipe using honey but it didn' work because it was very soft, so bad, I need to try it again maybe using 50% sugar and 50% honey.

    In Texas we call that brittle, our pralines are soft and chewy. And we pronounce praline as pra(y)line.

      Hi...in India we make it with variety of nuts like Sesame, cashews, dry coconut, peanuts, puffed rice and roasted channa....all taste extremely 👍

    Indonesia have this too but it changes almond for peanute and sugar for palm sugar

      It don't have any ofifial name. Anyone can called it as they like. My family called it kacang gula. Kacang mean peanute and gula mean sugar

    Do you need a stainless steel sauce pan or will a nonstick sauce pan work?
