The 5:09 - 5:35 point is a bit confusing -- surely you mean trimming the hinge side, right? If you trimmed the side that you just said to shim, it would make it even lower . . .
Hello! - typically all doors and windows etc are installed previously to installing dry wall here in New Zealand. We don't ever seem to have issues with frames etc being knocked around dry wall installers... the installations are strong enough to take any knocks issues while the plasterboard is being installed, and in a worst case scenario the frames can be re-adjusted prior to installing the architraves. why are you installing dr. before drywall. drywall (illegal pieceworkers) installers will destroy your instillation.
