In a crockpot,
1 lb shredded pepper jack
1lb cubed velveeta
1 can rotel
1 can evaporated milk
1/3 cup red onion
8oz extra sharp cheddar
1/2 jalapeño
Cover and put on low for a couple hours

Love chili con quest,Ortega green chili have flavor no heat,I’m afraid of jalapeño too.I use Ortega a little cream Monterey Jack and quest fresco a bit of garlic. Yours sounds great with the Rotelle
