Has to be one of my FAVORITE Burgers I have made -- Reverse Seared Brisket Burgers

- Smash burgers get all the glory when it comes to burgers on the griddle... but every now and then we want a thick juicy burger - so today we're doing a reverse seared brisket burger made with 100% ground brisket!
For this brisket burger, we're smoking it on the Traeger Ironwood XL pellet grill first to get that delicious smoke flavor. Then, we'll crank up the Traeger Flatrock griddle for the perfect seared burger crust... so you get the best of both worlds - the smoky flavor and the crust!
Finish it off with a simple homemade burger sauce and some sauteed onions for a burger that's packed with flavor and sure to be a crowd-pleaser! Enjoy!

Great looking burger. Thin/scraggly parts are much better used this way than getting burnt during the brisket cook.

I know some people think that this is heresy but I buy briskets when they're on sale and grind the whole thing for my hamburger meat. I don't do a lot of smoked food and I can buy brisket and grind it cheaper than going and buying chuck. It's awesome
Absolutely 100.. we did that as well. 2.99 for whole brisket. One Kroger had em for 1.99.. I left that one to buy at another and they didn’t have any left.

I have the utmost respect for anyone that served in our military. My uncle was a marine. While my mom was pregnant for me he came home on leave. While home he was killed in a car accident. She named me after him. Every year on Memorial Day while drinking my morning coffee I think of him and all those who served and died for our freedom. The word "Freedom" is one of the most valuable words to ever exist. Very impressive video with the use of the brisket, homemade sauce, and I love seeded buns. I would have loved to have seen since it is also a big BBQ day the use of the QUE That maybe in another burger or some ribs etc. Why would I suggest it or you even do it. Well because we have the "Freedom" to do so because of those who have served and died for our freedom. Great Job! "Love that burger Press too"

Hey Neal. Thank you for starting off giving the Cliff's Notes so that people realize what Memorial Day is about. Many of us Veterans still above ground know the loss of our fellow Service Members and I'll continue to capitalize the word Veteran until it becomes the standard. With that said, thank you for your service to the great U.S. Navy and keeping our squids well fed. I would post an American flag here but apparently YT doesn't allow it or have it in their emoji selection. I had 2 briskets in my freezer with no plans and they were taking up room so I did a coarse grind with no seasoning. 30 Lbs!!!! Vacuum sealed by the 2 Lb package and into the 4 body freezer. (If you don't debone, 3, maybe 2)

Fabulous looking burger, I always cut my burgers in half so I can share pics with my daughters…I was hoping you would cut across the bacon so it would show up more in the cut pictures, but it’s all good, we saw it hanging out over edge beforehand…hahahaha

I didn't know if I wanted to get into griddle cooking, but have been watching your channel. Great content, thanks! So, when Sam's Club's Member's Mark Pro Series went on sale recently for ~$300 for a 5 burner 36' griddle I bought it, because I figured worst case scenario my sunk costs have been minimized as opposed to the more expensive stuff out there. I am 1 cook in after seasoning so time will tell. I wish the surface was smoother. I guess I can fill it up with "seasoning".
I have really appreciated the basics videos, keep them coming. I have multiple items queued up in my Amazon cart thanks to you.
I have an existing Pitt Boss KC Combo, with a small griddle. I have loved that mini cast iron flat top but it is just to small to do any more than one thing at a time. The KC Pitt Boss is my least favorite cooker I have owned. Because it is combo, it is mediocre at best at everything.
Really appreciate the support....yeah..on that griddle...like all it should even out...plus the advantage you nailed...it will fill up with seasoning and create a thicker layer of thin coats...

I have a question, why do you use avocado oil sometimes instead of olive oil. I haven’t been able to detect a taste difference so I thought there might be something else. I was also told not to put olive oil on a hot surface, good or bad advice?
Really comes down to heat...olive oil is not supposed to be heated...olive oils with a higher heat are blends of other oils...when it comes to high heat cooking only certain oils can handle griddle cooking...avocado has a mild flavor vs olive oil...

hyey, great videos... question: do any of the griddles out there off a castiron burner?. too many grills have rusted out being stamped steel. my grill that has lasted the longest, is one from walmart purchased over 25 years ago and going strong.
Im sure there are some...to be honest...cast iron and steel are treated the same way....that should not determine the rust...i think its more about your seeing these rusty griddles Because of a few factors...1..inexperience when seasoning....2..inexperience how to maintain...3...how to clean and as a result since these are left out side...they will no doubt rust..
Now look at cast iron...Most not all come preseason from the manufacturer...we would add seasoning to it....and its kept inside..so all that said...i dont have rust,....and mine are not cast iron...

So you are undercooking the burgers at first because they will cook so much more when searing. I like Tavern Burgers - I like em thick, juicy, pink in the middle with a good sear all around it for that good charbroil flavor. I use the recipe from the New York Times Tavern Burger article found online. Problem is It's not consistent. I can over cook the inside and or ruin the outside sear easily and not sure why. I'll have to try your technique although I'd need to sear the sides too.
Yes thats right..undercook the inside...so you still have room to cook on the griddle to finnish off

The ONLY thing tgat you did wrong - is - cutting the hamburger. I don't understand why people do that. Otherwise, it looked great... and that's all I got to say about that.
I believe the ONLY reasons why are to, 1) share, 2) for the photo so people can see what the inside should look like, otherwise, I agree with you. Some times there has to be sacrifice to see what is at the center of a topic, not unlike Memorial Day.

I think they cut it for the same reason tgat i like yo leave it whole. We probably both believe our way makes it easoer to handel.
My thoughts - leaving it whole makes it easier to hold and control and keep together.
They probably think by cutting it - does tge same?!?!. My thought on that is: cutting it gives you less serface to hold and controle it and keep it together... and that's my reasoning for that.
