I was a casual watcher of cycling until I watched cav in the tour with that htc Columbia team, he was pretty much the sole reason me and now my son have fallen in love with this sport!

not sure how much you've followed cycling but the worlds and politics of sprinters, breakaway riders, domestiques and favourites don't intersect that much. Occasionally a sprint favourite will let his leadout man go if he seems to have a big gap and no one is closing him down. But it's rare. For stage winners in the mountains (where favourites often put minutes into rivals) they have lots of time to figure it out.
Could he have chosen to ride a different bike with different kit in this TT? It seems like it would have been more fitting to see him cross this final line on his sprint bike.

Fair enough. I didn't like him very much, and warmed up to him once he started being a bit more self aware. Doesn't detract from what he has achieved. I have a lot of opinions - for instance, what do you think of Cipo? Petacchi? Abdujaparov? JaJa before losing his teeth (and appetite for sprints) and becoming a climber? McEwen? Zabel? Maertens? Sagan? Kelly? I think a lot of them have similarities to the brashness and entitlement that Cavendish brandished - especially more with the "pure" sprinters. Maybe except Petacchi who was considered to be quite gentlemanly. In contrast, the Tashkent Terror simply didn't care if someone (even himself) got seriously hurt in a sprint.

And tbf, Cavendish does seem a more pleasant person these days (right at the very end of his career). But Girmay has just entered (what potentially will be) the high profile part of his career and he seems a good-natured fella right from the outset. Why is it he can be super-fast and pleasant contemporaneously but certain others I could mention (ahem) were not able to do that?

The difference is Cavendish beat the record with one discipline. Mercks achieved his record by winning in all three disciplines, TT, sprint and mountain. Granted, Cavendish took 16 years whereas Mercks only 8.
