Hi Terri ann. What type of potatoes you used ? I did this for Mother's Day and it teared and i was panicking.
I really want to avoid that mistake in the future
I think maybe because it was baked in the beginning and not boiled

Do we eat the skin or just the inside?
As long as you clean the potatoes well on the outside before cooking it’s fine to eat the skins too

Wait only 180 degrees, lol. I wonder what kind of oven she has because 350 degrees and up, I use for bake potatoes for an hr. Great recipe either way.
I’m using degrees Celsius which converts to about 350 and up in Fahrenheit

Can I bake the skins to make them crunchy?
Yes sure
Instead of baking can I just boil the potatoes in the skin and do the same thing?
It will have lots of moisture - you can boil to soften but definitely push in the oven for at least 10 minutes to dry them up a bit before carrying on with the rest of the recipe
