  • Ceviche is a popular beach snack that can be found along the Mexican coast. It's served cold and is perfect for hot days. A variety of seafood can be used in place of shrimp.
    .
    .
    .
    Ingredients:
    1 pound shrimp deviened
    4 tomatoes
    1 cucumber
    1/2 yellow onion
    3 cloves garlic
1 green onion (green part only)
    2 tablespoons cilantro/coriander
    *1 jalapeno or serano
    2-3 cups lime juice
    1/2 teaspoon ground cumin
    1 teaspoon ground coriander seed
*fresh chilies are typically used with ceviche but I use ground chili powder for this recipe. I like using ground chili so the entire dish is more evenly spiced. It also gives you more control over the spice level. I end up adding fresh habanero to the top of my bowl for extra flavor.
    makes 4 servings

Thank you. I have made ceviche many times, including with my friends from Quintana Roo. I have learned that everyone makes it slightly different. @@makeupandhairstyles-bp5ib no you do not have to cook the shrimp. the shrimp "cooks" in the acid from the lime juice. as long as you ensure all shrimp is covered and submerged in the juice.

Peel the cold raw shrimp. Then, chop them in small coin size pieces . This way the lime juice can cook thoroughly.

    Similar recipe
Peel shrimp/fish depending on what you prefer. Then dice shrimp/fish. Put shrimp/fish in a bowl or pan and then cover with lime juice. While it cooks (shrimp will turn pink when cooked approx 30mins-1hr), dice up roma tomatoes, purple onion, cilantro, jalapeños, cucumber, and place in a different bowl. Add garlic salt and salt to the diced veggies. After the shrimp cooks add the veggies and some chile piquin for flavor. Mix it up and add clamato or spicy clamato depending on preference.

I would avoid cooked shrimp. It will not absorb the flavors the same way and soaking it in acidic juice will make it rubbery. Lemon and Lime is a matter of preference. I mention both in the video because I substitute one if the other is not available.

I make a paste out of sour oranges and roasted green pepper and salt which is then fermented. My question is if I can use this paste to "cook" my fish? Also, would turtle be able to be used? I live near a big river and we have a lot of variety of fish and shell fish and reptiles. There are clams, crawdads (looks exactly like a lobster but typically no longer than 4 inches), oysters, catfish, bass, trout, carp, muskie, bluegill, punkinseed, snapping turtles, and a variety of snakes. What of this "sea"food would be good as ceviche? I already ferment fish guts in salt with herbs to make garum (a condiment similar to Vietnamese Mam).
