I am pleasantly surprised to see pork being consumed in Malaysia. I was under the impression that pork is not consumed there due to religious or cultural reasons (much like the other Islamic nations). Thanks for sharing this!! The folks preparing this dish are really dedicated and love their job.

One of the few authentic charsiew/siewyok/siewkai roasters left in MY. Most hv either passed on or left for the UK, US and even HK chinese restaurants. You wouldn't get this type of quality from HK if the roasters are from China PRC as the original cooks would have fled during the cultural revolution. HK restaurateurs are even hiring these cooks/roasters from Ipoh and KL and paying them top dollar while treating them as expats due to shortage of experts locally. This is a laborious profession and not many grads or youngsters locally want this life.

Malaysia and China specifically Hong kong has the best roast pork in the world. In terms of char siu, Malaysian’s version is the best in the world in my opinion.
They all look delicious and i bet they are affordable . Not like the modern way of cooking and put some flowers on plate and charge it 3 digit numbers .

It's charcoal. Not for smoking. For cooking. You could use anything you'd use in the US.
The best way of cooking, I do this with shoulder and cut in small pieces make sausage from and it perverse in olive oil for mountain people.
