    Your problem is that the warm and humid air gets in direct contact with the cold tin-roof. When the air gets colder, it releases some moisture on the cold surface (warm air can carry more humidity than cold air). Try painting your wood-paneling on your ceiling with a waterproof paint to prevent the diffusing of humidity into the space above the ceiling under the tin-roof.

    Welcome to the world of physics. Condensation water is the main reason for mold in modern insulated houses - if you insulate it wrong. The water comes always from inside (breath, your heater, plants, bathing etc.) and is transported via the warm air to the cold parts of the houses. So the easiest - but not really best solution - is to stop the warm and humid air from reaching the cold spots - a moisture barrier or layer, normally done with special kind of vapor barrier film. Put it just right under the first layer or wood or plaster: air - plaster/wood/ceiling - film - insulation - air - roof.
    This might help for some time - but you have to make sure, that this film is firmly closed everywhere and no tiny tiny holes help the warm and humid air to reach the cold roof. Your second problem is also the closed metal barrier you made with your roof: it can't dry. You need to make some passages for fresh air from outside to flow right under your metal roof, so insect protected holes for the air all around your eaves and verges to help the insulation dry again. Plain ole roof tiles with lots of air are still the way to go, but they are heavy and need quite some work.

    Rockwool should do it... No need to remove the roof (unless it's leaking) just take down your ceiling material to install the insulation. Rock wool is more mold resistant and fireproof than fiberglass. You'll still have to deal with the excess moisture from your propane stove but that's a separate issue from heat rising, hitting the cold metal roof and moisture precipitating out on your ceiling. I hope you have a Carbon-monoxide detector because that might be making you sick. Ventilate, baby!

    just get a direct vent propane heater ,, or an old RV Furnace that can be vented, also small chinese diesel heater..VENTED
