I'm interested in your suggestion for a pizza oven, catering up to 50-60 pizzas max. The new Gozney Arc has a large opening, and I'm afraid it might lose a lot of heat... Would you recommend two Gozney Roccbox ovens or Pizza Party Emozione or Pizza Party Bollore, or something else?
Would it be possible to show a video on how to properly cure the Gozney oven (who knows, this might be applicable to all other pizza ovens as well) as most of us are not operating them for business and sometimes don't use them for a longer period of time (during winter and so forth). The video could be classed as oven maintenance perhaps.
Please show the pizza not only from above but also from below! At the moment there are videos of the ARC where the bottom is totally burnt and black !!!
The only reason the pizza has been burnt on the bottom is because it’s been cooked incorrectly, nothing to do with the oven. Inexperienced users. If you know how to use a pizza spinner correctly then it’s easily enough to lift it from the bottom if that starts to happen.You never leave a pizza directly on the stone throughout the baking process. If you’ve seen pizzas that have been burnt on the bottom the chef then takes total blame. Absolutely nothing to do with the oven or any other oven
