Just came back here to say That I cooked this for my sons 4th pool party birthday. And it was amazinnnggg. Everybody loved it. And this was the EXACT flavor I was looking for! I will say that I used white vinegar, regular salt, and I did use celery salt and white pepper as well. Loved it!! Thank you so much lol

The single best grilled chicken ever; life changing, epic. For us normal folk this is the equivalent of fancy folk going to a 5-started restaurant. Besides the taste, the best part was smelling the chicken cooking but not having to pull the car over and being able to enjoy a few beers with it. Great work, sir. Thank you!
I made this yesterday on a charcoal grill and it came out excellent! Incredible flavor. The neighbors came out to ask what I was cooking. I made extra to slice and keep in the fridge for salads and sandwiches all week. After heavy grill marking I finished cooking the thicker piece chicken breasts in my oven at 350 for 8 minutes to cook through the center. Thanks for sharing! Easy technique, great results
Made this chicken last night at a poolside party...everyone agreed, best grilled chicken ever. Followed the recipe exactly, so moist and flavorful. Can't wait for the next party.

I tried this marinade/basting sauce last night and found it absolutely delicious. I did make a few adjustments to the marinade. I used Lea & Perrins 30% Reduced Sodium Worcestershire Sauce and did not add the Sea Salt or Celery Salt due to my low sodium diet. I did add the White Pepper and used Celery Seed.
The taste and flavor is indescribably awesome, leaving your taste buds dancing for more! I think this marinade would work with Pork Chops as well, can’t wait to try.

So I've been doing this marinade for 2 years and this is my first time commenting. This marinade is fantastic. And cooking over direct heat is the way to go. I use leg quarters when I do this and they come our so flavorful and moist. NO SAUCE NEEDED! It will just take away from that amazing flavor. Thanks Brother! Awesome stuff!

Here are some tweaks:
Use Kosher salt instead of sea salt
Use 4 Tbsp of packed Brown Sugar instead of 2 Tbsp of white granulated sugar
Add a packet of Sazon Goya con Achiote (gives it a great flavor and color)
Keep the rest of the recipe the same

Marinade:
2 cups apple cider vinegar
1 cup vegetable oil
3/4 cup worsteshire sauce
2 tbsp sea salt
2 tbsp sugar
1 tbsp granulated onion
1 tbsp granulated garlic
1 tbsp black pepper (or white pepper)
1 tbsp celery seed
Have you made this? How does it taste? How long does it take? Do you cook on direct or indirect heat?
It's amazing, I let marinate for 1-3 hours and cook over hot charcoal with hickory chips for about 15-20 minutes, until it feels firm and looks like it does in this video (charred). I did direct heat because it tastes better the more you char it, and since you keep coating it in the marinate it keeps it from burning too much before it's done. You can cook it on propane as well, but you'll want to make a hickory chip packet out of aluminum foil and poke a hole in it to get the smoke flavor. Better over charcoal though.
kcajla3 when you baste it, are you basting the chicken with the original marinade that the chicken was marinading in?
I baste it in the same marinade that I used to soak it in, I don't do it towards the end of the cook since it did have raw chicken in it
Many thanks, I've been looking for "long barbecue" for a while now, and I think this has helped. Have you heard people talk about - Ariafan Barbecue Babassu - (should be on google have a look ) ? Ive heard some pretty good things about it and my friend got amazing success with it.
I have been makeing this for years in a fire company pit I got from a fireman I know who used to sell it. I can make 50 pieces at a shot n just flip the rack. But I just use applecider vinager a stick of butter salt n some lemon. then I spray it on with a garden sprayer. Awsome chicken. Love the vinager taste.

2 cups ACV
1 cup vegetable oil
3/4 cup Worcestershire sauce

Today I made this marinade and cooked chicken thighs over lump charcoal along with your potato wedges. Everything was so good, even my kids ate the food. 😂 I never had roadside chicken in my life, so I did not know what to expect. It was delicious, I recommend everyone try this out

Looks delicious. Couple of questions: Do you do the entirety of the cooking over the direct coals save for the last 5-7 minutes? You mention covering the chicken a couple of times during the video but don't give an amount of time to cover it. Also, how often do you baste the pieces? Could you give a written step-step of the grilling process? That would be a huge help to a novice like me. Thanks! Can't wait to try the recipe.

At first I thought this is gonna come out super sour with all the vinegar , but it came out perfect and prob the best BBQ chicken I have made

I've been searching and searching for a chicken marinade/mop recipe that would take me back to the large BBQ's put on by my father's volunteer firemen group when I was a kid. I've smelled something similar from time-to-time during some country church BBQ functions, but have never collected the recipe. This one sounds like it may be spot on. I'll try it and let you know.

Do you cook the left-over marinade before you baste? It doesn't seem like it would be a good idea to use marinade for basting that has had raw chicken in it. ... Or do you use a different batch of marinade?
It's why he's got the leftover marinade in a pan on top of the grill through the basting. I'm sure he did bring it up to temperature and then maintained it on the grill. Even so as long as he's basting and cooking with it its not going to make anyone sick from samonella. It's cooked on the chicken.
As long as you aren't drinking it without it being brought to temperature it's fine.
I put it in a small saucepan over the direct coals and boil it for a couple of minutes before basting. It actually will reduce down the longer you cook it. Dee-Lish!!!!

It would be best just to be safe because you baste constantly. What goes on the top at the end might not hit the right temp to kill bacteria.

If not, is it safe to use the marinade that was just on the raw chicken?
I would either make a separate marinade for basting or boil the marinade for several minutes to kill the bacteria. I noticed he had the marinade on the grill which is fine as long as it had previously reached a boil.

I tried this marinade about 3 weeks and and slapped my chicken on the grill after about 2 hours of marinading and let me tell you. That apple cider vinegar is 🔑

Thanks Larry, I actually meant the old Jumbo, I noticed the 2 holes at the top on each sides, I have the same model , I got it off CL for 20 bucks last year. Started reading and people said it was hard to control temps because of the vent placement. But I see you did the chicken without problems.

This is a great marinade. I sometimes bump it up by adding a tablespoon of chili powder and/or some molasses. For the dry ingredients, I would suggest tossing them together in a dry pan to toast for a bit, it brings out the flavors more. But all-in-all TheWolfePit did it again with a fine recipe. Why don't these guys have a show on the Food Network? They are so much better than the tired, old, chefs they currently feature there. I mean, how many Bobby or Giada shows do you really need?
Loving the beautiful crispy skin on chicken..Apple Cider vinegar definitely adds so much flavor to the recipes...That little magic bullets can be quite handy isn't it? I use mine all the time. Now, I've never cooked with celery seeds? Whats different about using them over celery salt?

I tried it with a Slow n Sear cooking indirect first and sear at the end. Came out pretty well. However I just ordered a Smokenator Hovergrill, my thinking is I can (hopefully) cook direct over the coals the whole time but still far enough away so the flames won't burn the chicken. That way the marinade and chicken fat can drip down for the entire cook, not just at the beginning or at the end. The Santa Maria attachment might work better, but they are expensive so trying the cheap way first!

Get a bottle or two of Italian dressing. That's pretty much what you made. Then add seasonings to that if you want to. Plus, add a beer of your choice to the marinade. Let chicken soak in that for a day or two,Enjoy!!!
