Vegan Red Lentil Fritters | Deliciously Ella

  • These vegan red lentil fritters are one of the most popular recipes on our app and a real favourite at home. I love them served with plain yoghurt (I use a coconut yoghurt), avocado slices and a drizzling of siracha for a little spice.
    To make 12 vegan red lentil fritters, serves 4
    - 150g red lentils
    - 4 large carrots, peeled and grated
    - 1 red onion, peeled and finely sliced
    - 1 large clove of garlic, peeled and chopped
    - 50g gram (chickpea) flour
    - 1/2 teaspoon cayenne pepper
    - 1 teaspoon paprika
    - 1 tablespoon coconut oil, plus more for frying
    - Generous pinch of salt
    Method
    Place the red lentils into a pan of boiling water over a medium heat and cook until soft, about 25 minutes. Drain and place to one side to cool.
    Once cool, combine all the ingredients in a large bowl and mix well, adding a little dash of water if the mixture feels too dry. Leave the mixture to one side for 5 minutes.
    Scoop out large spoonfuls of the mixture and form them into patty shapes using your hands. The mixture should make around 12 fritters.
    Heat some coconut oil in a frying pan, and once the pan really hot, place 3-4 fritters in the pan and cook for 5-10 minutes on each side until golden on the outside and cooked through.

    Thanks for sharing. I was brought up with lentil (dhal curry) what we called "Vaday" in the local language(Tamil) in India since my childhood. It is nice to see what we could with lentil. As a vegan, I need more such recipes to meet my protein requirements for the day.

      @@vjd431 Hi, some of them broke up a little but wasn't too bad.. The ones I broke are the ones I tried to flip a little bit too early but I got the hang of it with a nice hot pan, hope that helps

    I live alone, so talk of big batches and family lunch boxes excludes me. I know I can freeze things, but I'd love to see recipes for a single person - or maybe for 2 meals (not 12!)
