So it's Saturday night at 11:51pm and for the last hour, I have been trying to look for a strong coffee cake recipe. Thankfully you just popped up. Finally, thank you for creating and sharing this amazing soft and delectable coffee cake recipe. I can't wait to make this!!! :)

Just looking at the texture of castella cake makes me hungry - the crumb looks sooo even. I think this is one of the best things you've made I love it!
A small tip: dissolve instant coffee in cold water, not hot. It prevents it from getting super bitter and acidic. For baking, you can probably use the bitterness and acidity, but I tend to like it better without. For baking too, I'll dissolve the instant coffee in cold brew for more coffee flavor and less of a bite. ' v '

Just made this! It is light and soft like cloud. It is not so sweet which I like. I did crack the top though if you can let me know what to avoid. Very yummy. Will perfect this next time! Thank you!!!
@@christinah.7477 I use 1 pack of Starbucks instant Expresso. The flavor is nice but on a mild side. I would put 2 more or something. Our family like it strong. I also undercook it on the bottom middle part haha, man, bad mistake. I cook for 53 minute, but the thing is I have a bigger bread baking pan thingy. I wonder if I should put that inside the hot water bath , if that would help.

Upon cutting, top half looks fluffy but bottom half looks dense. When beating egg white should I do till long soft peaks or short stiff peaks? What could be wrong?
I placed my tray at bottom rack and baked for 50 mins. Checked with skewer for doneness. Looks OK except for one part. And I baked another 5 mins since its bottom rack. . Top surface dark brown and rather hard. Is it over baked? Letting it cool down now before I remove cake ftom tin
Wright of egg whites and yolks must be and also tell which oven did you used conventional or convection oven. PS: I have convection oven in top and bottom heating element works along with fan. What time and temperature should I consider to make this cake.

Hi, no need adjust the temperature, just increase the time by about 10-20 minutes, depending on the size of the cake

Hi, mix the flour in heated oil will stop gluten forming thus yields softer cake

Hi, there are many factors for this, baking temperature, excessive stirring causes defoaming or insufficient to beat egg white

Why do you sometimes steam with a rack and sometimes use hot water bath ( mould sitting in water). Is there a difference?
