I like Aerostich’s approach with all their stuff, even if I don’t own anything from therm right now. My chest protection comes from my Klim A1 Rally airbag vest. It has chest pads for the low speed off-road getoffs without the airbag deploying all the time, but I tossed them because I just ride on road these days.
